    Looks like a great cocktail once again Kevin. Can you rehydrate raw powdered whey to make the shrub ? Hard to find raw liquid whey in my area, and gotta say making it from scratch looks to be quite the ordeal. But I have raw unflavored whey used for the gym, would that work ? And what ratio powder-water would be good ?

      Some people online say that curdling milk with a bit of lemon or vinegar can give you whey, but I'm not sure how much it would resemble the final cocktail

      Yes, thats exactly how we get whey. I am unsure about the powdered form, but I think it should be ok.

    Dumb question, but where does one find whey? I assume that liquid isn't just re-hydrated whey protein? Can it be made at home?

      This is the liquid by-product when making cheese. Whey is something they usually throw away.

    Hi Kevin! Another amazing video. I gotta try this one :D I love rose aroma and flavour in cocktails. Unfortunately it's rarely used. A great way to incorporate some rose-ish flavors is to use a good quality wild rose jam, you gotta try this ;)
    Could you do a video or a newsletter about the leftovers from superjuice (lemons/limes) clarification? Are they usable or rubbish? Two weeks ago I did a clarified mojito with your clarified cordial. Man, almost 1/2 of the cordial is gone after the clarification, it's such a waste to throw it. It's still full of flavours! Can we use the to make a jam like you did?

      Thank you for the idea. I will think of what it can be done. Try to break down the yell before you clarify it because there shouldn't be so many loses.

    Hey Can i replace lillet rose with rosepetal infused gin ??
    Also because i am using Gin can i add young wine in my strawberry cordial?
    And last question 😀 pectin x is not available in my country any substitute apart from agar agar

      Yes, you can use a gin in here too. I suggest adding more cordial, though. Agar agar is the only thing I can think of right now that will do the job. However, check out some specialized winemaking stores. They usually sell pectinex. Cheers!

    It is an interesting recipe - but there are several things, which makes not a lot of sense.
    • If you are using whey, you have already lactic acid. I think it is unnecessary to use whey *and* use lactic acid.
    • If you macerate strawberries, you will end up with an extremely intense syrup - which is also very clear. So you can save yourself a lot of work and products (pectinex etc.).
    • In my experience, strawberries are not so prone to oxidize. Obviously if you cook them, they might keep their color a bit better - that’s why it is also better to macerate...
    • I actually love the milk cracker - will for sure experiment with this.
    • Not sure if I would use a Nick & Nora glass for a relatively carbonated drink...
    • It is a bit too stereotype for me, that the “low alcoholic drink” is suggested for Women’s day.

    Kevin i need to ask you something, i believe you will be able to help. So i have pectinase in powder form in my inventory instead of pectinex ,
    Does it work the same? and if yes , what's the ratio per weight juice , so i will know approximately how much to add?

      Hi! I have never used pectinase in powdered form so I can't help you with this. I would start with the same amount as liquid form and start from there. You might need to make some more tests to get the final ration. I would be happy if you can share the results with us here. Cheers!

      Did you head it up enough? Try with stick blender if hand mixer doesn't work.

      You can get it in some milky/cheese factory. I got mine in the store. Also, you can make it at home. Add some acidity to the milky, and you'll get whey and cheese which you can use both afterward 😉🥂

      No. Ascorbic acid is pure vitamin C. Rather use lemon juice instead.
