    It was the Gimlet that first got me into cocktails about 20 years ago after I read Raymond Chandler's "The Long Good-bye" in which it featured. Rose's Lime Cordial in the UK sticks closer to its original recipe than in the US I think, but freshly squeezed lime juice and sugar syrup makes a refreshing alternative.

    There's an old adage popular where I live: "Three ingredients is a cocktail, two ingredients is an emergency." But, I would readily make an exception for a drink made with ingredients that are themselves made yourself. Excellent work!

      If you count saline solution in the second cocktail it's three ingredients, even without the garnish! And if two ingredients is an emergency, what's a pre-batched Old Fashioned that you just pour on the rocks straight from the bottle? 😎

    My favorite Gimlet recipe is 2 Oz Gin, 1 Oz lime and half an Oz of Simple syrup. It makes it like a Gin daquri and I love it.

    Clarified cocktails are a current craze that I don't really grasp, but I do love the cordial recipe. I love the idea of a Gimlet without Rose's, which I'm not a huge fan of. I'll be making that. Would you do anything differently without adding the agar?

    Wonderful recipe!
    After ~ 10 days, the smoke dissipates and the cordial becomes more acidic (too acidic for a tasty gimlet). At this point, I’ve enjoyed mixing 1.25oz cordial, 1oz cachaça, 1/4 oz Cointreau, 2 drops saline solution. :)

    Love the gimlet, very simple little thing end of the day, though making my own cordial sounds like a bunch of fun and anything but simple lol. That said I have been stepping away from drinks atm, watching my sugar intake, and well, alcohol has much sugar lol. That said, will always be watching for that video that makes me grab that occasional drink. Cheers!

    It would be interesting to get your take on making cordials for tiki or tiki adjacent drinks (fruity 'marinis', etc) or do you think the variants required wouldn't be practical? Could you make a fruit specific cordial (passion fruit, pineapple) and make tinctures to add flavors like coconut etc?

      I am not such a big fan of cordials in classic "Tiki" drinks, but it might be done in some cocktail that has elevated from these types of drinks.

    Does the milk washing technique remove all of the casein (milk protein). The owner of my restaurant has dietary restrictions, and I am having a hard time finding the answer.

    Interesting. I created the Morgenthaler lime cordial and used it to make gimlets. I LOOOOOVED them, but it seems that some people prefer the milder 'gin sour' variation (gin, lime juice, sweetener). So now when I offer someone a gimlet, I always ask them if they want the classic version or the modern one. (Sometimes I pronounce 'modern' as 'Shi**y') :)

    This one was my favourite by far! Can't explain the flavours but it was a dang good one! Despite the fact that I can't stand gin in general (bad experience 😂) this cocktail was truly delicious! Bravo.

    Any chance this would keep longer if you disinfected the bottle by putting it into boiling water for 1-2 minutes? Or do you think heating the cordial would ruin the flavour?

    I created a cocktail called a Swamp Fairy that maaaaybe would work with your cordial, honestly not sure. It's 2 oz. gin, 3/4 oz simple syrup, 3/4 oz fresh lime juice, 1/2 oz green Chartreuse, and 4 or 5 basil leaves. This may offend your sensibilities, but I muddle the basil with the lime juice, add everything else, then shake and strain but only through a cobbler shaker, I don't fine strain, so the drink gets lime pulp and just small shreds of basil, hence, Swamp Fairy. Pretty much the opposite of a clarified cocktail. The Chartreuse may be problematic with the rose, smoke, and pepper, but I'll leave it to you as the expert to decide if it sounds good or horrible. I don't have the experience to always tell if something sounds good on paper, I sometimes just have to dive in and try it, but it's fun. Thanks for the inspiring and educational videos, cheers!

      The chartreuse would probably "kill" the rose but it would go well with pepper and smoke. Also, both would go with basil too. I like your idea! Thank you for taking your time and sharing your recipe! Cheers!

    I make my own lime cordial because the ingredients that go into Rose's are just blah. I don't clarify or anything, though. I just use fresh lime juice, zest, sugar, water and citric acid. I'd like to try your recipe at some point.

    Great video as always. Why are cordials often preferred to use over flavored syrups + sour element (Flavored rose water syrup + Lemon/lime juice for instance)?

      Good question! Like mentioned, the historic usage was to preserve citrus juice with sugar. As luck would have it, the combination is made even better if you add a spirit. Modern use just makes it a bit faster I guess, so you can prep to make a bunch of cocktails and just use different spirits for the base. Gin, rum, tequila, you're good to go. Hope this helps!

    Any reason the cordial is only good in the fridge for only 10 days? Is that just how long the smoke is going to stay present? Is there any reason it would last (fairly) indefinitely like most cordials, just with a loss of smokiness?

    I'd love to try the cordial this summer, seems the perfect refreshing drink if mixed with sparkling chilled water!
    The only problem is that I can only find malic acid online in 1kg bags and I'm sure over 100g would be pretty overkill, where do you buy yours? Also, I have some anhydrous and monohydrate citric acid, which one dose the weights refer to?

      This weights refers to anhydrous citric acid. I bought this malic acid on amazon, but I found a speciality store for vineyards that offers different packages of malic acid.

    I wonder to what extent you think it's beneficial to make your own cordial if you are making super juice? I was thinking about making some cordial with my lime super juice when I realised that super juice is practically a cordial without the sugar. I then proceeded to make a 2:1:1 gimlet with super juice and simple and to me it tasted about as good as a cordial version.

      you are right! Super juice mixed with sugar syrup is actually cordial. I would rather go with 2, .75, .75. though.
