Whipped Cream
yield: 4 cups/ 1 lb. 1oz/ 485 grams, or enough to ice and decorate an 8 inch cake
What you need.....
2 cups (1 pint/ 500ml) heavy whipping cream
1/2 cup (2 1/4 oz/65 g) confectioners sugar
1 tablespoon Vanilla extract
How to make this....
Place all ingredients into the bowl of a stand mixer fitted with the whisk attachment.
Whip on medium speed until slightly thickened, about 1 1/2 minutes.
Turn mixer to high speed and whip until thick (about another 1 1/2 minutes). Note: when you do this step, watch the mixture closely, it is ready when it looks like icing. If you whip it too much, it will turn into butter.

Cake Pop Dough
You can use this mixture to create cake pops, ice cream sandwiches or ice cream cakes!!
What you need....
5 cups garbage cake (cake crumbs or left over cake scraps)
1 cup cream cheese buttercream (you can use regular buttercream or any icing)
How to make this....
Place cake into the bowl of a stand mixer fitted with the paddle attachment. You can also do this in a mixing bowl and use a spoon to mix by hand.
Place the mixer on low and allow the cake to break up into crumbs.
Add buttercream and mix on low until incorporated. It should be the consistency of cookie dough.

Got busy with life crap and missed the beginning of the series so I binged all the shows tonight. Soooooooo happy you're back on. Loved all of the shows. Am I the only one that thinks desiccated coconut sounds like it's about to ralph? Any kind of coconut makes me want to desiccate but I loved the penguins. When Brandon does a French accent he sounds like Pepe Le Pew.

Fun fact: my friend Jody loves to eat maraschino cherries! 🍒 One time, I bought a jar to take to her, went to her apartment, was carrying too many things and the jar smashed on the sidewalk right in front of her door. So sad.
But also kinda funny...ya know, later it was funny. That was like 20 years ago, so now it's hilarious!! 😄
I was at my great aunt's house and my brother and I were making sundaes. I found a jar of cherries in the fridge and put them on both of our sundaes. I took a bite a few minutes later and they BURNED my throat. Turns out they weren't normal maraschino cherries. They were moonshine cherries. The ABV must have been like 30%

I just did a double chocolate mint chocolate ice cream cake for my brother’s birthday. I liked the sponge, as it was ( not cakepopified ), and I stabilized the whipped cream. I wish I had softened the ice cream how you did, but now I know for next time!
