Authentic Indonesian Sop Buntut - Oxtail Soup (super mantab dan gampang!)

  • Authentic Indonesian Oxtail Soup Recipe
    Meat:
    1kg of oxtail
    Aromatics
    6 cloves of garlic
    2 to 3 cm of ginger
    2 to 3cm of cinnamon bark
    5 pieces of cloves
    half an onion
    Seasoning:
    1/2 table spoon of nutmeg
    white pepper (adjust amount to taste)
    sugar (adjust amount to taste)
    salt (adjust amount to taste)
    MSG (optional)
    Vegetables:
    2 large potatoes
    2 large carrots
    2 tomatoes
    Garnish:
    2 stalks of Chinese / asian celery (the thin celery)
    2 spring onion
    1 lime
    Method:
    1. Chop up the garlic and onion. And smash the ginger.
    2. Saute them on medium heat until fragrant. Add the cinnamon stick, cloves, white pepper, nutmeg, some salt and pepper. Once they turn golden brown, set this aside.
    3. Boil the ox tail for about 5 minutes.
    4. Prepare about 2 litres of fresh water in a pot. And after 5 minutes boiling we can transfer the oxtail pieces into the new pot of water.
    5. Bring it back to boil and add the aromatics that we set aside earlier.
    6. Gently boil on the stove for 1.5 to 2 hours. You can check the softness of the meat with a fork. We want a medium softness, not too crumbly but not too tough either.
    7. Chop up the potatoes, carrots, and tomatoes. Also chop up some spring onion and Chinese celery for garnish later.
    8. Check up on the boiling oxtail with a fork to check the softness. You want them soft but still a little bouncy. Once done, pick them out from the broth and set aside.
    9. (optional step) Pan fry the oxtail pieces to form a slight charred crust on the outside.
    10. Scoop up and strain all the aromatics from the broth.
    11. Add some water back to it to make about 1.8 litres of soup. Bring it back to a gentle boil.
    12. Taste the soup and season it accordingly with some salt, white pepper, sugar and MSG (optional) to taste.
    13. Once it starts to boil, add the chopped up carrot first and then the potatoes and close the lid.
    14. As the carrots and potatoes are about ready, add in the tomatoes and boil it for about 2 minutes. We don't want to overcook the tomatoes as it will completely break down into the soup.
    15. Once done, we want to scoop up some oil out of the surface as we don't want the broth to be too oily. But make sure to also leave some to give the soup a bit more body.
    16. (optional step) Making the simple sambal. Skip this if you don't like spicy food. Chop up 4 small red chillies and 2 cloves of garlic finely. Grind them on a mortar and pestle with a drizzle of oil and some salt. You can also use a food processor to do this. Saute the mix until the water is evaporated.
    17. Serve the oxtail with the vegetables and pour the soup on top. Garnish with the chopped up Chinese celery and a dash of lime juice. Best served with the sambal and some warm rice.

    tried this recipe, it was delicious. however, I'd suggest lowering the amount of nutmeg in the recipe as it overpowers other spices in the broth 😅
