I second this! Spent hours making bread last night, parchment paper ended up melting to the bottom of each loaf of bread. Tried to salvage but it wasnt worth it for how bad it was. This is a very important piece of advice.
I follow a slightly different recipe, and dusting the bottom of the dutch oven with flour works just fine. No parchment paper needed. Maybe it works for this recipe too?

Also like this comment so more people see it 3 cups flour 2 tsp sugar 1 1/2 tsp salt 3/4 tsp Yeast 1 1/4 cups water In a large bowl mix together the flour, salt, sugar and yeast. Add some lukewarm water (~110°F) and mix everything together to form a shaggy mass of dough. Cover the bowl with plastic wrap and let sit and rise in a warm environment for about 2 hours. After 2 hours, preheat the oven to 450°F with a Dutch oven inside (so the Dutch oven gets preheated as well) Transfer the dough on to a floured work surface (the dough will be sticky so dust it with some flour whenever needed); knead the dough (fold it on to itself, turn, and repeat) for 2-3 mins until a tensive dough ball forms. Transfer to a proofing basket or parchment lined bowl, cover and let rise for 35 mins or until the dough doubles in size. Place the dough ball in the preheated Dutch oven lined with parchment and bake at 450°F for 30 minutes; reduce the oven temperature to 400°F, remove the lid, and bake for another 10-15 more minutes (at this point the longer you bake the bread the crispier the crust will be.. just make sure the bottom doesn't burn) - enjoy with salted butter!

My first ever time making bread and it turned out great! I didn't use parchment paper, just floured the bottom of the pot and prayed I wouldn't burn myself plopping it into a preheated dutch oven, and it didn't stick to the bottom at all. The crust was nice and crispy, and the inside was perfectly fluffy and soft. It was slightly salty for my tastes (next time, I may reduce salt to 1 1/4 tsp or so) but was delicious paired with soup and just like what you might find in a store or bakery. Don't think I need to test out any other recipes lol - this will be my go-to.

Mine is in the oven as I type this, the smell is amazing. On it's last minutes of 400 degrees. I added scallion and cooked bacon inside and put "Everything Bagel" on it's outside. I can't wait :)
I made this yesterday but my oven had a problem where it took too long to reach 400f. I settled on a lower temperature but the bread still turned out perfect!! The crust was sooo crispy I was so proud of myself!
390g or 3 cups artisan bread flour or all purpose. I use strong plain flour 2tsp sugar 1 1/4 salt 3/4 tsp instant or active dried yeast 300ml or 1+1/4 cups water

If you put it in the banneton seam side *down*, you won't have to cut it either. The seam will be on top during baking, and create a natural point for the crust to crack during oven rise. I always did it this way because I started following written recipes that didn't specify seam side up or down, and then later on I realized you're 'supposed' to bake it seam side down and score it. But that's just an extra step that isn't necessary at all! The only important thing is that you're consistent, so don't put it seam side down to proof and then bake seam side up.

I have a question I hope someone can answer. This recipe shows a second rising time (after kneading). I see many recipes on UA-cam that have no knead and no second rise. I tried that type of recipe, twice. Both times it turned out tasty but dense. Very little air pockets bc the dough lost its air when I placed the nicely risen dough into the Dutch Oven. So my question is why do these types of recipes (no knead , no second rise) have so many comments saying it turned out light and airy, etc? I believe the second rise time is crucial!
I made this today and it didn't turn out so great. I mixed it, then let sit for 2 hrs. It hadn't risen much. I used my dough hook in the kitchen aid for 2-3 min and then let it rise for 30 min. It was still the same size so I had to wait for another hour before it had risen. At that point I think my dutch oven was too hot, it burned the bottom of the bread.
This was my first time ever making bread and 2-3 minutes of kneading was not enough for me. I spent 2-3 minutes taking it out of the bowl it sat in and dealing with the stickiness Wet your hands and swing them around to dry. Wet hands makes it actually possible to work with the dough. Just fold it onto itself until it gets easier to work with then you can push down on it. Probably after some practise i can get it down to 3 minutes
Just made some. The dough seems tough. Maybe too much flour. But I weighed out 390 grams. According to the King Arthur packaging, 360 grams would equal 3 cups. Not 390? So not sure if that’s right or not.
Hi! I am making bread for the first time ever and i am trying this recipe! I am on my fourth try rn bc i didn't activate the yeast and then i didn't use enough yeast. Anyways! When you first mix the dough up before it rises is it supposed to be a little lumpy i couldn't tell in the video. Is it possible to over mix the dough? What if the water is too hot or too cold? Thank you.
If you don't have a dutch oven, you can simply put a pot in the oven while it's heating up and add boiling water at the same time you will add your bread in the oven. That's what I do and the bread is great!
I mixed and put in a bowl on the stove preheated really low but my bread doesn’t rise like hers. I’ve tried twice now. I can’t figure out what I’m doing wrong. Should I leave it for longer?
A lot of things can be a factor-but mainly humidity in your kitchen/climate, was your water warm for the yeast (make sure it’s active dry yeast not the non active one, and that it’s not expired or old), and a lot of people don’t see the need for sugar but a bit of sugar helps the yeast have something to help feed it too. Hopefully it will turn out better with time and practice! Good luck 🙂

I just made this bread. I made two separate loafs and did everything the same. One formed well and the other was wet and mushy. Don't know why...

I use Bobs Red Mill Artisian and it does NOT cal for sugar. Mine comes out awesome. First time bread makung and now I am mastering it.

If you’re using Fleischmann’s Active Dry Yeast do you need to dissolve it in warm water first? It sure doesn’t seem like she did.
