Kerala style chicken mandhi
Ingredients
Chicken 1 kg
Basmati rice 1kg
Capsicum 1
Coriander leaves 4tablespoon
Mint leaves 3Tbspn
green chilly 4
Cardamom 5
Clove 15
Cinamon 3 piece
Chicken cube 2
Sunflower oil 250ml
Pepper powder 1 1/2 Tbspn
Cumin 1 Tbspn
Wash and soak rice for half hour ,put chicken in a pressure cooker make sure that chicken does not contain too much water content add chopped Capsicum, coriander leaves and mint leaves and add cardomom,cinamon and cloves add pepper powder and cumin seeds and also add one Tbspn pepper then add chicken cube and sunflower oil mix all together well( u can use food colour for good looking)chicken cube contain salt so only add salt if need.and rest for atleast one hour,cook basmati rice (add salt and 1/2 lemon juice) strain rice when it cook 70% and pour the rice in to the pressure cooker add 4 green chillies in the top of the rice close it and cook in high flame for 5 minutes and reduce the flame in a medium range cook till one whistle come. And off the flame and mix oil in the chiken and rice together ,delicious and super tasty mandi ready
