I made these with 1 cup banana instead of pumpkin and added a little more coconut flour (bananas were not as thick as pumpkin) and added almond extract to the cream cheese filling. They were delicious!!!!! The pumpkin ones were delicious also. Just thought I’d share. This is the best sugar free muffin recipe I have ever had!!! Thank you for this recipe ❤❤

You want to make sure that whisk this well. Slowly incorporate your dry ingredients into your wet. Next, make your cream cheese mixture. Fill your muffin pan with liners and scoop using a spoon or ice cream scooper. You can swirl your cream cheese mixture on top or add a dollop on top. Bake for 20-25 minutes until the middle comes out clean with a toothpick.

Piping in here as someone who cannot do almond flour. The general rule is 1 c almond flour about equal to 1/3 c coconut flour plus additional liquid for equivalent resultant volume. This recipe is great to make a multiples, though if you need/want only 1 huge or 2 reasonable servings this flavor profile is easier as a microwave mug cake with cream cheese frosting. In a ramekin or large mug, melt 1 Tbsp. butter, add 2 Tbsp. pumpkin puree, 2 Tbsp. HWC, 2 Tbsp. sweetener, 1 egg, dash of vanilla extract, dash of salt and mix well. Then add 2 Tbsp. coconut flour , then 1/2 tsp. baking, 1/4 tsp. cinnamon, rounded 1/8 tsp. ginger, scant 1/8 tsp. clove and mix well. Rest a minute for coconut flour to finish absorbing moisture. Smooth top. Microwave 5 to 7 minutes depending on MW strength until top is no longer wet and seems firm. Release by running a butter knife all the way around then upend onto a plate. In a small bowl, mix softened 1-2 oz of cream cheese, 1 tsp HWC and 3-4 Tbsp. (to taste) of powdered sweetener. Spread on top. Hope this helps those of us who dare NOT have extra servings sitting around.

I put 1 tbsp scoop of batter 1 tbsp scoop of cream cheese filling top it with one more scoop of batter and threw some walnuts on top! They had to set. I’m allergic to tree nuts, especially almonds, so I looked up how to substitute coconut flour for almond flour. It is 1/4 cup of coconut flour plus 1 egg for every cup of almond flour. I’m going to try this recipe with that substitute andI will let you know how it turns out.

I just made these and want to go out and buy an ice cream scooper so mine can be as pretty as yours. 😂 The recipe was easy to follow (a little intimidating at first because I’m not a confident baker…but easy nonetheless). I have not had the Starbucks version, but this one is yummy! It was a little too sweet for me. So next time i will probably use a little less sugar. I just made this with my granddaughter who is 6, at first I was a little worried because I thought the muffin didn't cook all the way through, I put it back in the oven for another 7 minutes and when it cooled completely my granddaughter tried it and gave it the thumbs up. As a side note for anyone wanting to use their own pumpkin purée … it will take effort and some time to get the same thickness as the canned ones as they go through a process of using a variety of winter squashes and water is removed … , well unless you are me because you would rather use local pumpkin and squashes 😅😇🤣 enjoy autumn and everything pumpkin spice ❤🙏🏼

I made this today. It’s really good, but even though I followed the recipe and made with my own home made pumpkin purée, it still didn’t taste a lot like pumpkin. The almond flour really took over in this recipe. I think I will try with 3/4 almond flour and a bit more purée next time. My picky kids loved it, so thanks for the recipe.

Question? Why add coconut flour? More carbs & sugars? Will it make a difference if I eliminate it? Type 2 Diabetic trying to keep my sugars low. I made your Pumpkin Loaf… AMAZING!!!!!!
So I did try this. I looked up how to substitute almond flour for coconut flour. This is what I found Replace every 1/4 cup (1 ounce) of coconut flour with at least 1 cup of almond flour. Decrease the amount of liquid in the recipe by using one less egg for every 1/4 cup of coconut flour that the recipe initially called for. A couple of thoughts. It definitely needs more seasonings. I also think this recipe really needs a brown sugar substitute. I just think that brown sugar and pumpkin mesh so well and it was missing that deep flavor. The tops browned way before the muffins were cooked so maybe look at it halfway through and make a foil covering. Over all it was good especially for a first try.

cup almond flour
¼ cup coconut flour
⅓ cup avocado oil
2 large eggs
2 tsp baking powder
1 cup no sugar added pumpkin puree
½ cup sweetener of choice
1 tsp pumpkin pie spice (add more if you’d like!)
1 tsp vanilla extract
Pinch of salt
Cream cheese mixture:
8 oz cream cheese, softened
¼ cup powdered sweetener
½ tsp vanilla extract
1 egg yolk
I made these tonight! So good!! I did add a little more confectioners sweetner to the cream cheese filling… very yummy! And I made the chocolate cake too! Yum!
I made these muffins on Saturday to be the dessert to have with coffee for the LSU football game. Even though LSU played like 💩, these muffins were the highlight of the game! They were a big hit!!

Wonderful recipe ! As a side note for anyone wanting to use their own pumpkin purée … it will take effort and some time to get the same thickness as the canned ones as they go through a process of using a variety of winter squashes and water is removed … , well unless you are me because you would rather use local pumpkin and squashes 😅😇🤣 enjoy autumn and everything pumpkin spice ❤🙏🏼

Good evening Mayra. Once again you've done it. - a homemade recipe that's even better than Starbucks (and of course you don't have to wait in line to enjoy them) . I'll be those muffins are delicious. I might try some tomorrow for an early morning bit of low carb high protein goodness to get my day started. I made this today. It’s really good, but even though I followed the recipe and made with my own home made pumpkin purée, it still didn’t taste a lot like pumpkin. The almond flour really took over in this recipe. I think I will try with 3/4 almond flour and a bit more purée next time. My picky kids loved it, so thanks for the recipe.
We love these but we put them over ice with rum or vodka and they are amazing for a weekend treat!😊

So I did try this. I looked up how to substitute almond flour for coconut flour.
This is what I found
Replace every 1/4 cup (1 ounce) of coconut flour with at least 1 cup of almond flour.
Decrease the amount of liquid in the recipe by using one less egg for every 1/4 cup of coconut flour that the recipe initially called for.
A couple of thoughts. It definitely needs more seasonings. I also think this recipe really needs a brown sugar substitute. I just think that brown sugar and pumpkin mesh so well and it was missing that deep flavor. The tops browned way before the muffins were cooked so maybe look at it halfway through and make a foil covering. Over all it was good especially for a first try.
