If you can find a LOW (for a gas stovetop, the high ones are for wood stoves) ring for it, you'll never have to toss the first waffle again. Plus the ring catches excess batter. But I enjoyed seeing one work so well with no ring!
I have a family member who has adopted the dietary portion of veganism. Which means he generally doesn't come over for Saturday breakfast anymore. I'm going to try this waffle recipe and see if he'll come over and try some with us.

The recipes I've seen are 1 Tbsp ground Flaxseed mixed with 2-3 Tbsp water equals one egg. Let sit until it gels. That trick of adding oil before syrupy stuff is a tip from some of the best cooks in the world! I have a new Rome "off grid" waffle iron from Amazon (the Store) ☺ I haven't used it yet because of intimidation - I keep thinking I'll have several batches of sacrificial waffles before I get it figured out, but after watching this PROfessional demo, I AM NOW READY to attempt this heretofore unknown technique. You'll never figure it out though if you never get started! Regarding the flax seed, it is a pretty good egg sub, also half a banana = 1 egg. I dont recommend using a banana though in something that gets fried-ish i.e. pancakes, waffles as the sugar in the banana will stick like crazy (learned the hard way)

Probably because it has a lot of fibers in it. Apologies for mentioning this in a food thread, but I give my Shetland Sheepdog a couple of spoonfuls every day so he doesn't get loose stools. Those are a real nightmare with longhaired breeds. I'm going to double up on my supply next time I go shopping and try using it as an egg substitute. Thanks for this.

I've heard of people using instant potatoes for an egg substitute, but that kind of defeats the "healthy, natural" intent.

Now that you say it, I remember reading about the spring handles. It took a little fiddling with the flame to get it right but works well once you do.

it works well in bread-ish things. I also sub bananas occasionally (1/2=1 egg)

The funny thing is, I made some using no substitutions a while back and they were so boring I now prefer this way.

I have tried Trader Joe's GF flour, it didn't work well in the waffle iron but does really well for pancakes (same recipe)
How do you season a waffle maker?
Like you season any other cast iron skillet. Q-tips work fairly well for removing excess oil from in between the nooks and crannies.
