Dark Dry Roux Chicken and Sausage Gumbo, no oil Gumbo

  • This Gumbo was so flavorful, I cannot believe it does not have any oil. Place 3/4 Cup of flour in a dry cast iron skillet at 375-425 degrees and stir every 15-20 min till desired color is reached. I made a homemade broth from some chicken legs with some veggies and simmered some chicken breast to bulk up the pot. I will never make a roux using oil again.

    Did you season the flour before baking it?

      no seasoning just flour in a dry skillet. All the seasoning goes in the gumbo pot! That roux can also be kept in freezer for quick gravy or thickener instead of gumbo.
