Because so long as Allen doesn't know that he's talking to the real Patrick Bateman, Patrick can still feel like he's in a position of control, and take some amount of comfort in that control. I think the opening line in the dialogue is a recognition of Patrick’s awareness that everyone in his circle is so narcissistically self absorbed that they’re not even listening anyway, they’re too busy talking about themselves. Paul Allen is a great example of this, it’s all about ‘his being better’, even though he works with Patrick every day he still doesn’t even know his name. It’s not through lack of intelligence, it’s through lack of caring. Patrick prefixes the conversation with such an outlandish statement because he knows he’s not listening anyway, and the lack of response to it proves his point. Of course Patrick is super jealous of Paul, but Paul is also very narcissistic and therefore by nature doesn’t give Patrick any recognition or respect, not even knowing his name, something a Psychopath really craves. This really grates Patrick to an extreme. The whole conversation is essentially a justification in Patrick’s mind that Paul needs to die. Contrast this to Patrick and his encounters with both Luis and Jean. Unlike most of his circle, both aren’t narcissistic and actually show a genuine interest in him. This causes a crisis of conscience within him as it’s something he’s not accustomed to, and ultimately saves their lives. You could extrapolate this to a likely scenario that, Patrick’s psychopathy stems from a lack of attention or genuine affection as a child and growing up, was probably bullied by some of these narcissistic types, which has driven him to be so disciplined in his desire to be successful and ‘prove these people wrong’ and be ‘better than these people’, but also means he lacks any genuine connection with anyone as a consequence. He’s so used to not having a connection and not being listened to, that it is almost normal to him that his girlfriend doesn’t listen to him. However when Luis and Jean show him a genuine affection, it makes him extremely uncomfortable, as this is something he’s unaccustomed to, and doesn’t really know how to deal with it.
