    Ingredients:
    3 cup basmati rice
    500 g mushrooms cut in pieces
    2 tbsp oil
    half cup garlic chopped
    1 cup red onion chopped
    1 tbsp green chilies chopped
    1 tsp ginger chopped
    half cut red bell pepper diced
    half cup boiled carrots diced
    1 tsp black pepper powder
    1 tsp white vinegar
    1 tbsp light soy sauce
    1 tbsp dark soy sauce
    salt to taste
    fresh coriander leave's chopped
    spring onion's chopped
    for garnish:
    spring onion's chopped
    fresh coriander leave's chopped (optional)
    fried garlic chip's
    Methods:
    - In a pot add some water for boiling rice. Add some salt as required. Soak 3 cup rice in hot water for 30 minute's. When the water is boiling add the soak rice and cook the rice for 7 to 8 minute's. Keep checking the rice as we want the rice to be done 70% and not over cook.
    - When the rice is cooked 70% strain it in a strainer. Keep the rice under running water as we don't want it to be over cooked.
    - Take a pan and add oil, when oil is hot add chopped garlic and stir fry the garlic on medium heat, till the garlic is golden brown. Make sure the garlic don't stick at the bottom. When your garlic is golden brown, strain the oil out so that your garlic remains crispy.
    - Now add the chopped onions, onion's will stop the garlic from burning. Stir fry the onion's thill they are pink in or soft in texture. Add chopped green chilies in the onion's and stir fry it. Add chopped ginger and stir fry it.
    - Now add cut mushrooms in the pan. Stir fry the mushrooms for 5 minute's.
    - When you see that the mushroom's are soft, its time to add other vegetable's. Add red bell pepper, boiled carrot's and stir fry the vegetable's for 5 minute's.
    - Now add black pepper crushed, white vinegar, light soy sauce, dark soy sauce and stir fry all the ingredients together. Add salt to taste.
    - Add the rice which we cooked 70%. Now add chopped coriander leave's and chopped spring onion's, now mix everything together with the rice and cook it for 5 minute's.
    - Burnt Garlic Mushroom Fried Rice is ready. Garnish it with spring onion's and fried garlic chip's. (and with chopped fresh coriander optional)
