i am alone also, i have done upside down cake in muffin tins & pizza bread, garlic bread, bread pudding. dont try rice pudding. it loses it on warming up.

I made the frittata twice using leftover veggies and herbs. Portion is perfect to pair with fruit or small salad. Quick to bake. So many combos. Each one can have a different combo so you're not eating the same flavor note every time. I will make more tomorrow as part of meal prep for the week. Thanks so very much for the inspiration!

For the sushi cups (I love this idea because I LOVE sushi but hate rolling) can the cream cheese be left out or substituted? You mentioned that this is what holds it together.
