    Team miracle whip, 100%. I think its because I grew up wit it and nothing compares to that sweet/vinegary taste! Saying that I have had to switch to mayo, because of Keto. I am sure going to try your version of the miracle whip, hope it lives up to my hopes and dreams! Then Ill be back on my devilled eggs, keto version!

    I just did this and it tastes amazing. Haven't even put it in the fridge yet. I made the mayo, so I can make myself tuna fish to eat, without bread for now until I make your carnivore bread. I used regular white vinegar, 2 sticks of salted butter, three 1/4 teaspoons of pink salt, 3 teaspoons of Dijon mustard, 3 teaspoons of white vinegar and the 2 eggs split just like you said. I measured those amounts exactly. And to me it tastes perfect! Thanks for your thorough instructions and videos. It is going to help me add foods back in that I've not been able to have on keto/carnivore. My first thing I made was keto /carnivore ice cream. I make a big batch to freeze for my Ninja creami cups. 12 dozen eggs (yoke and white), 1 quart heavy cream, liberally salted (probably at least 2 tablespoons), 1 big tub (quart size, I think) of Ratio brand vanilla yogurt, one 9 oz jar of 4th & Heart Ghee (clarified butter) and 4 tablespoons of pure vanilla extract. It's awesome.

    So....This works, even for the Breville control grip immersion blender, which is too large to fit in any normal container or mason jar and also the blade sits up high.
    I was so skeptical, but I new I could just double it if I needed to so I went for it.
    I had all the problems I expected. The blades and egg yolk barely made contact. So I tilted my container so it would and I blended them up as best as I could. Then I slowly added the butter, not the easiest thing at that angle. And when I was done it was still more liquidy that I am used to, or expecting, but...a couple of hours in the fridge and it was gorgeous!!!!!
    I have never been able to make mayo with the Breville that used anything less than 2 whole eggs before. This is a game changed for me. And I loved the flavor. I made some over the weekend for a beef carpaccio and I have been dipping everything else I cooked since. Yummy!

    I grew up with both mayo and mw. Definitely will try this recipe! I use both acv and lemon juice in the mayo. I think it makes it taste more like Hellmanns. BTW, this mayo recipe makes superior blue cheese dressing! I add in crumbled blue cheese and a pinch of dill and garlic powder at the end and give it a stir. The warm mayo melts the flavor through out the dressing! So good I can eat it on a pork rind like a spread!!!!!! Thanks for the recipe Chris!!!!❤

    Two questions: 1. Does the egg need to be at room temperature? 2. Does the butter mayo turn runny again as it warms up out of the fridge or in your recipe? Thanks for the info. Will definitely be trying this when I get the chance!

    • @ChrisCookingNashville
      @ChrisCookingNashville  Рік тому +18

      The egg doesn’t have to be room temperature at all. The mayo will be very soft at room temp but not runny. If you put it in a hot recipe it will start to melt like butter but stays a little thicker than butter still. Hope you enjoy. 😊

  • @joshuaroberts8616

    I started to make it wrong and then scrambled to thicken it up before refrigerating. 🥴 It definitely separated. The next day I broke up the butter and got it all in the nutribullet. You may need to pry the butter from under the blades a few times, blending again between. It came out fine. Big win even though I wasn’t paying enough attention.

  • @milabulic
    @milabulic 10 місяців тому +1

    I made it today and it is so good!
    So, when some people say that it never thickens, the cause could also be the age of the eggs they use. After all, the whites break down pretty quickly and become very watery.
    I used an egg that was laid this morning, and mine turned out nowhere near as runny as yours prior to refrigeration. In fact, it was almost perfectly thick. After several hours in the fridge, it did not get hard as I feared it might become. It was creamy and wonderful ❤
    I believe that you were 💯 correct during your bacon grease mayo video when you suggested that it was to do with the protein structure in the whites and when they are added, which prevents the hardening.
    So, my suggestion is that when the egg is separated, if the white is watery and not gelatinous, use less of it or more butter.

    I have been doing some research on making copycat Kraft Mayonnaise, my favorite. It is a flavor between Miracle Whip and most brands of mayonnaise. I haven’t tried making it yet, but I am planning to do the copycat using your spreadable butter mayonnaise recipe. I will be using Dijon mustard, lemon juice and vinegar, sweetener (but less sweetener than the miracle whip recipe), salt, pinch of onion powder and pinch of garlic powder. And as you said I will add the seasonings at the end, after the emulsion is set. I can’t wait to try it.

    I was never a mayo fan until I made my own, but have always used light tasting OO, so this is much better!!! My preference is heavy duty mayo...It is richer and keeps foods like chicken salad, very creamy. The only difference is it has extra yolks. I am going to try this with an extra yolk to see if I can replicate heavy duty mayo 😋 Thanks so much for the inspiration.

      I use 2 yolks, I wouldn't call mine heavy duty. I have very large home grown eggs. Going to use Chris' hint of removing some of the egg white too. We will see, but absolutely love this recipe.

      It was good but I'm going to make some changes next time. I usually use 1 whole egg and extra yolk for a cup of oil...with 2T lemon juice, 1/2t ground mustard and 1/2t salt.
      So since this was a smaller amount of fat, it was a little too much yolk. So I will double the butter next time, and will go back to ground mustard as the Dijon is a little overpowering in the flavor. I'll probably use lemon juice next time as well, as i see thats used in the miracle whip. It made great turkey salad... very rich and creamy like heavy mayo is, just a little overwhelmed by the prepared mustard. Otherwise, I think this is a winner and love that there is some customization available for different taste buds. Thanks Chris!!!

    Thank you❤ I am so happy you created this and thank you for sharing! I love mayo and can't eat the gross substitutes from the store. This is a God send. (Also I love the adorable puppy encounter at the end 😂)

    Miracle whip for wraps and sandwiches/egg salad/tuna salad. Mayo for everything else.

    Greetings from the UK, @Chriscookingnashville. I made a garlic version of this for a family feast for New Year’s Eve and everyone loved it! I modified it with a glove of garlic and added two tablespoons of homemade yoghurt whey and left to ferment overnight before refrigerating . I had some today and it is indeed soft and spreadable. Thank you for the videos. 😊

    Hello, Chris! This is fabulous, thank you. Why is allulose your preferred sweetener please? I haven't tried it but I find they all have an unpleasant aftertaste.

    • @ChrisCookingNashville
      @ChrisCookingNashville  9 місяців тому +2

      Hello! I think allulose has the best flavor with no aftertaste personally. It can also be caramelized and has some other great properties for culinary uses. It’s less sweet than some others so I tend to add a little monk fruit/erythritol blend as well to balance out the flavor and sweetness. You can use anything you like though. 😊

    I love your butter mayo but I grew up eating only miracle whip. I’m going to try making it. I have only one problem with Dijon mustard it upsets my stomach. Is there another mustard I could use?

    I grew up on Miracle Whip for sandwiches but Mayonnaise for cooking! So I thank you so much for both these recipes. I've been enjoying your mayo ever since you did your 1st video on mayo! You ROCK!

    Mayo! When I was growing up, my mom used to make mayo sandwiches. I loved them. We also used mayo as our salad dressing.

    I never liked Miracle Whip, since it was just too sweet. I wanted sugar on my donuts, but not on my BLT. It also had little tiny red dots in it that reminded me of concrete mites. Bon apetit! So GO TEAM MAYO!

      I think it’s much better with butter. I don’t care for the flavor of avocado oil and as a carnivore I don’t want to eat it anyway. 😊
