Yum, there is nothing nicer than chops in gravy. I love it. My Mum used to cook T-bone steak with an onion and tomato gravy. That's yummy too. Some nice mashed potatoes, roast pumpkin and some greens. Now I'm hungry for chops in mushroom and onion gravy.

What perfect timing! I pulled pork chops from the freezer this morning. The only thing I don't have is parsley, but I can pick some up after work. What kind of pans do you use? I received a lovely set of Lagostina for Christmas, but a skillet wasn't included. I'd like a deep, sturdy one but haven't found one I like.

Dave my friend, since they sell the ground beef/chuck without giving you the meat to fat ratio I Canada , I figure they they don't do this either. The diff between a t-bone & porter house is in the size of the tenderloin, the short loin tenderloins taper from the the rear of the beef from back( large filet) to front ( small filet), there are 2 tenderloin straps, but the other side of N.Y. strip steaks are same size, & per the USDA here any filet that is 1 & 1/4 inches or less from the the vertical bone to the furthest outer edge is a t-bone, more than that stretch of 1 & 1/4 inch is a porter house which is a larger filet mignon & cost more , some places try to pass off a t-bone as a porter house & we are talking appx. $3.00 dollars or more per steak. Check your filets when buying pal.

Dave my friend, you have been a roll for some great recipes lately although your others are good, yes on us & the girls( they like mushrooms in gravy) button mushrooms are fine, I like baby bella also known as crimini mushrooms, really rich and meaty, I'd serve this over steamed rice with the mushroom gravy and chop, & some peas or maybe even baby lima beans, regular ones, or butter beans, they are the same bean it just depends on long they have matured on the plant keep your stick on the ice pal, btw a spoon of creme fraiche in that gravy would really make it rich, also bone in rib chops like you used, the t-bone pork chop cost is more & can have really sharp bones which I don't want the girls gnawing on. If you are interested, let me know & I'll give you the info on the diff between a beef t-bone steak & porter house & why the porter houst cost is more as I researched that a couple yrs ago or you may already know being a chef
