    1/2 cup water kefir grains, 1/2 cup sugar, 1/2 gallon of water. Leave 2 to 3 days. Strain. Half fill bottle and add herbs/spices/fruit/ juice. Add 1 1/2 tbpns of sugar fill rest of way with water. Sit 2 to 3 days max. If you leave for too long it will explode! Put in fridge to stop fermentation for 2 to 3 days, will get vinegary after that.

    Huge thanks for introducing me to this!!! I developed a severe allergy to milk and had to give up my milk kefir. I got some grains when I first saw your video. It's SO good!     I had an explosion a couple of years ago right after weather started to warm up. One bottle exploded and hit another one. Fortunately, I was just opening the kitchen door from outside when it happened and heard the explosion. I always check my bottles daily for a little pressure test now. Like you said, glass all over dents in my ceiling. If I hadn’t heard it happen, I would never have believed it!

    I love this! My favorite flavor is pineapple and fresh peppermint from my yard. I blend them with an immersion blender, strain then pour them into my bottles and top with water kefir and water.. Trying this lime ginger lemon balm flavor next! It sounds like healthy 7-Up ❤

    Omgoodness! I laughed so hard about your explosion not at you but at the thought I have a beloved husband who is notorious for leaving a swallow of anything next to the fridge before bed..... my summer kitchen is literally outside and I e had milk jugs explode and just so many thing over the past 13 years.... all I could see after writing all these Instructions down was kapow!!!!!!
    We live in florida, and with a tiny home I cook outside 10 months of the year.... no ac so this is a well heard note to show him prior to even making it! And the person who said CHEMIST'S was on point!❤❤❤❤❤❤

      Silver and copper, brass too are natural antimicrobials.
      So my guess is someone discovered these metals' antimicrobial properties while trying to culture a batch of friendly bacteria only to repeatedly have the cultures die on them.

    When I have water keifer or kombucha get past the point where I want to drink it (too vinegar-y😂), I will mix it with some olive oil to use as a salad dressing, vegetable glaze, or use coconut oil when using it with meat for a marinade. I rarely let anything go to waste- I just imagine another way to use it!😊. Thanks for sharing and teaching, sister!       There's proof that carrageenan which is taken from sea moss is very hard on the gut. I don't know if the sea moss is over glorified. And now over harvested. Or if there's any real truth to it I haven't found anybody who can prove it though I wish they could in so many ways.❤

      There's something here that you're missing "Carrageenan which is taken from" it's almost like when we strip a substance from a natural source and highly refine it causes issues 😉

    I found the water kefir grains online. I can’t wait to try this out! It’s a great idea. Pop (Midwest terminology for soda lol) just tastes too sweet so I can’t wait to play around with the ingredients. I need this in my life and in my body. 😊❤

    Hi April…just finished watching this video. I can’t wait to buy some bugs & get started!!! I need this in so many ways!! So…the main reason that I’m messaging you, is that it was so difficult watching you juice that lime from Hell, that I just have to tell you a much easier way to juice citrus fruits. I hope I can describe it so you understand me…lol, you are smart enough to do it!!🤣😉. I first roll the fruit to loosen up the juices, then take your knife & cut down all around the SIDES of the fruit lengthwise, avoid cutting through the center & it helps if you cut a bit from one end to stand it up. You then have effectively cut through all of the membranes that separate each segment!! Don’t trash the leftover center, just give it a twist to get the rest of the juice out!! Now I hope that you will test this method out…you’ll be amazed at just how easy it is to squeeze out SO much more juice!! And you only dirtied up a knife!!

    My daughter and I drink milk Kefir almost everyday, but buying it gets expensive. This is super fascinating and I had no idea there was such a thing. I will absolutely be looking for kefir grains to try this. Thank you sooo much. I love your videos. Keep up the great work. ❤❤❤

    Fantastic video & teaching! I had a few bottles of fruit second ferment kombucha explode in my kitchen a few summers ago. Thankfully, I had just stepped out of the kitchen, plus they were under some stacking stools! We thought it was a shotgun shot! I cleaned up glass that shot down our hallway, into our dining room & huge amounts all over the kitchen, even behind my stove! It embedded in our drywall & cupboard!
    I haven’t forgotten a second ferment since then. The brown beer bottles where you can get refills here in Canada are the strongest glass & they didn’t explode. I do milk kefir & now want to do water kefir! Thanks for sharing! 🤗🇨🇦

    I love making all kinds of kefir and wild ferments ~ Especially using tea as my flavor base. I sweeten the trees with honey or sugar and it works well either way. I’m about to make some whey lemonade ~ great video dear

      Remember with water kefir honey eventually kills the grains so only use it in the second ferment (for anyone reading and because I forgot to say that in the video 😂)

    Super cool that you did this video. I have my kifer grains in the fridge. I did them a year or so ago. We got busy or something, and I put them in there. I've been thinking about getting them out again. Now I'm gonna make me some rasberry water kifer. I love rasberry stuff, and I've got some in the freezer already. I only have 2 of those soda bottles. I'll have to grab a couple more.

      Yep it'll go to work killing off the bad bacteria in your gut! A small cup daily for about a week or so will usually have you adapted to it/through the die off❤️

    Wow! I am newer to the water Kiefer process. You’ve made me love it even more. I too had an experience with too much pressure in the bottle. It didn’t explode, but most of it sprayed out of the bottle all over the blinds over the kitchen window. Needless to say the blinds got really clean… I’m even wondering if something in the second ferment help clean the gunk off of the blinds. Lol. Since I just discovered your channel, I will be looking forward to watching more of your videos.

      They seldom reactivate all the way and can take many months before they make reliable soda. I would look for a fermentation group on Facebook. You will probably find somebody in Canada. Willing to send you some.

    Flax hemp and chia seeds and I swear it’s better than soda! It’s SO delicious after a few days!! I use the brags acv with honey 😍 mine may or may not be what you’ve made

    I made strawberry, orange out of strawberry juice that I had canned up. I just poured a glass. This shit is absolutely delicious 😊. Thank you for showing how to do this. I also have a bottle of strawberry, ginger and a bottle of strawberry, lemon balm. Can hardly wait to taste them.

      This is definitely easier. But I think that it's worth doing both if you have the ability. Because everything has different bacterias in our body needs to choose them. It just gives you a better chance to get the things you need.

    Im absolutely interested in doing this as im lactose intolerant and really love Kefir. I was so sad when i couldn't find one without dairy. I suggest rolling the limes on counter first or stick in microwave for anjt then roll, they'll release juice eas easier. I was taught this in culinary school 💚

    Hey April! just wondering, when you first add the kefir grains, water and sugar, are you capping the jar with a lid that has holes in it or is it a solid lid?

      I'm using a fermentation lid but that's because it can off gas. You can simply cover the top with like a paper towel and rubber band, but I have a lot of other fermentations happening nearby so I use the ferment lids to prevent cross-contamination.

    Thank you, April for yet ANOTHER brilliant thing that I have NEVER heard of 😂 and as my husband and daughters are very reluctant to give up their fizzy pop ( soda) I think I'll be switching it out with a bottle or two of this magic potion! . The raspberry one your daughter likes looks so refreshing! But you're preferred flavour of lemon balm, ginger ( and I've forgotten the third ingredient 🙄😂) is one that I think I'd definitely really like, as I make a tea with those things every morning! ❤❤

    For shingles/all diseases I heard that a full liquid detox for 2 years will rid of all diseases including shingles. Probiotics are also included. This would also include bone broth soup, vegetable and fruit smoothies, herbsl teas one type of tea thats good is hibiscus tea, and of course water, etc.

    I have a couple questions.
    1) what did you do with the first strained jar? You strained a jar into a large measuring dish, came back a couple days later and strained another jar. What happened to the first strained water?
    2) what do you do with the kefir that has been strained and you’re done with it? Throw it away? Keep it in a jar in the fridge?

      I turned it into the same water kefir I showed you how to make 😉 the little grains You watched me strain out have to be put back into sugar water. And what you strain off is what you turn into the water kefir 💚

      Thanks for asking that because that confused me, too, the first time I watched the video. I was thinking, "Wait, is that fresh water or the kefir water she just strained and now being used for this next step?"
      What tripped me up was hearing how lukewarm water is best. When I watched the video again today, I realized it was the strained kefir water being added back in.
      I have ordered my grains and white waiting for them to arrive, I've written comprehensive notes and have popsicle molds ready to go.
      Perusing the comments has also provided a lot of additional helpful information.

    I've made it before but it is hard to keep up with them and not killing them off..I would like to do it again and if you had a great way to pause every now and then without worrying that would be super helpful thank you and as always just amazing content.

      When you want to take a break you can put them in double sugar water and store the grains in the fridge for up to four weeks ☺️

    My water kefir grains arrived today here in Australia
    I made this about 5-6 years ago, so you have encouraged me to start again. I used to put a couple of majool dates and or raisins plus the fresh fruit of various types Oh and the ginger. So what content of sugar would be left in it when it’s finished or is it all gone. I need this big time once again
    And Yes I am smart enough to do this ❤

    Hello April ,i love your videos ❤ ' i was wondering if this is ok to drink for people with insulin problems? My Mom used to make kefir water when i was a kid ' with lemon, and i loved it .

      I talk about this a bit in the video and it just depends on the person. I would make sure to let them firm it all the way and maybe even sit in the fridge for an extra day or so. After that just do a little test drink. You know 1/4 cup and see what your blood sugar does over the next hour. In theory, there's not very much sugar left at all.

    Thank you sooo much for this!!! I have 1 question, can you use raw honey vs sugar? Does it even matter?
    My son & husband & even myself need to build up our gut biome! I cannot thank you enough for sharing your wisdom!

      I should have mentioned that honey will kill water kefir as the bacteria from the honey isn't compatible with the bacterial colonies. You can make Jun with honey though!

    Well now I want to get ibto this too! Been brewing booch for years and the secret to sweet booch is tiny batches so fresh tea and I put lots of my homemade juice in the 2nd ferment. Sometimes I do worry about the sugar content when it's super sweet!

    April today is the first time I have ever watched your videos and your so funny and I love your teaching method. It is easy to understand. As for those tough lines I beat mine with a rolling pin lol no I roll it on the cabinet with the pin because I can use the force of g both hands and I also have laid them on the floor and took the heel of my foot and give it a roll back and forth. It will juice then trust me 😂. Can't wait to watch more videos 😊

    5:22 if you have a metal strainer you could also line it with cheesecloth, nut milk bag, or a tea towel rather than buying a new strainer!
