You can see the difference in their techniques. The dad mostly uses finger movements while the daughter uses wrist movement. Their level of fine motor precision is simply amazing!

Dad also feeds the sticks in extremely steadily, like a machine. It's why he can get the pieces small and uniform, while the daughter's feed speeds up and slows down and she ends up with all sizes
This just shows the difference between someone working faster to get the job done and someone that’s got so much experience doing it they’re relaxed while working fast

You can see the mastery in dad’s technique by watching how little his hand moves compared to hers. He wastes no energy in moving the blade only as much as he needs to, and his muscle memory in his hand must be phenomenal as well. A true craftsman at work
Was just gonna say the same. His blade was moving like a bees' wings, whereas hers was a lot higher, although, still very quick!
I bet most men who have been...hardened...in the crucible of puberty, would be able to recreate this incredible speed/muscle memory... just have to adjust to holding a slightly different tool...
