4 Ingredient Hash Browns

  • Hash browns
    Ingredients
    * 4 russet potatoes
    * 8-10 cups fat(duck fat, lard, beef tallow)
    * Salt to taste
    * 1 tbsp cornstarch
    Instructions
    1. Peel and grate the russet potatoes using medium side of a box cheese grater. Add the shredded potato to cold water and agitate it to get rid of the starch.
    2. Strain the potatoes and squeeze out any excess moisture using a clean kitchen rag.
    3. Add the shredded potato to a pot along with the fat.
    4. Heat on medium low until it reaches 210 degrees Fahrenheit stirring occasionally so the bottom doesn’t stick.
    5. Strain the potatoes and save the fat for frying later on.
    6. Season to taste with salt(2-3 tsp) and add cornstarch. Lightly combine together until fully incorporated.
    7. On a lined sheet tray, add the potato to a ring mold and form them into an oval shape.
    8. Place the hash browns in the freezer for a couple of hours or until completely frozen.
    9. Heat the leftover fat to 375 degrees Fahrenheit and deep fry the hash brown for 5 minutes until golden brown and crispy(fry 1-2 at a time).
    10. Season with a little more salt and enjoy.

    I tried this and it fell apart immediately after hitting the oil. Just forming them isn't enough. They need to be packed to prevent separation.

      It could have been how much he froze it, how much he blanched them in the fat
      It could also depend on the kind of fat he uses to blanch
      Duck fat is superior but it's a little harder to get a hold of.
      That being said. Yes, for dishes like this, russets are a better choice due to the higher percentage of starch
      HOWEVER you are also soaking and rinsing them as well as adding the starch
      He also may not have a ring mold which your average kitchen may not have on hand
      I have made such dishes with other potatoes and they have turned out nicely. You do have to handle them differently however

      Another recipe briefly rinsed the potato strands only once so more of the potato's starch would remain, instead of doing multiple rinses.

    I just got done forming the hashbrowns may I say the process takes forever hats off to you for doing this especially because I only got about 6 out of the potatoes 🥔 i suggest doubling the recipe if you’ve a family of 3 or more🥹

    We do it differently on slavic countries. We use smaller grater, so we don't need to boil potatoes before frying. We also add one egg to the mix.

      They will brown if exposed to the air for too long. Keeping them moist keeps their color.

    I'm confused call me you wash off the potato starch and then add cornstarch Hmmm... I'm going to try making hash browns but mixing them together then frying them in the oven or air fryer. 🤞 A lot less calories and healthier for you
