Honestly, I never found his "super tasting" ability all that impressive. They put food down in front of him, like a black garlic shitaki Ribollita. The black garlic and shitaki is easy to recognitize. Then he just uses the common ingredients of Ribollita. leftover bread, cannellini beans, kale, cabbage etc. And then he just tries to figure out the details of the Ribollita. Like does it have chard or just celery? And usually he gets v those details wrong. Sooo... I don't think he is so much a super taster as much as he just uses process of elimination.

He's not wrong, mirin is technically an alcohol. Its really sweet, and fermented, it's a cousin of sake. That's where he's getting the fermented ,sweet flavour and that umami flavor he originally thought was soy sauce.

When I saw Roy Choi I knew he was gonna miss nearly everything. Roys recipes are deeply complex. This one wasn't even that bad. He'll make a 20 ingredient sauce that's just the base of his 30 ingredient marinade. Watch his Netflix show.
For the week of April foods you guys should make everyone do someone else’s show. Like Molly do this, Chris does gourmet makes, Claire does its alive, brad does Molly’s, etc

I really like how well the other test kitchen people always do their best to lift the host's spirits while they are being emotionally tormented by the concept of their own show.
But Claire has the toughest show, because store-bought things have chemical additives that give so many textures and unique tastes but she can't find those normally.
HOT TAKE: You should tell Chris his real percentages after each round so he knows if he's on the right track or if he needs to change substantially!! especially for episodes like this!
They should also giving weighting to the ingredients list so missing out on something small like mirin counts less than using the wrong cut of meat. The should also award bonus points if Chris makes something that tastes better than the original.

He did great considering the ingredients. Like the man has the credit he deserves. Also, one suggestion. Since he added a pre-made hot sauce, you could "tick" some of the ingredients that the hot sauce already has, cause he technically got it right (jalapeno, vinegar, pepper etc)
Or when he add light brown sugar instead white or onion instead shallot. I can imagen why spring onion are different or types of meat, but shallot? It's the same things! Actually in some other countries (Russia) we call it shallot-onion. Hah scallion is just green onion)

The initial tasting is amazing cause Chris always says exactly the right thing then never goes for it. He picked out an Asian fusion element in the beginning and never went for it. This is one of the hardest shows ever but Chris’s good attitude is key.

The fact that Chris basically nailed the taste and appearance while missing half the ingredients speaks to the fact that the original dish had a ton of useless ingredients in it that didn't contribute to the final dish.
I completely agree!! If hes not tasting a specific ingredient, why does it have to be in the dish? It reminds me of how the have basics recipes that have only 10 ingredients and they're all wonderful!
But he didn't nail the taste. And just because he can't identify an ingredient by its individual taste doesn't mean it's not contributing something to the overall flavor profile.
also, i think if he gets something close enough they should give it to him. for example when he added brown sugar and it just called for normal sugar i feel like that’s close enough. but maybe that’s just me 🤷🏻♀️

I had to rewatch that so many times, it is hilarious! Just for fun I put the video's play speed down during this moment (to the lowest speed setting and then you will notice that Brad does not speak English compared to the others) and it made it even better. Best moment XD
This was kind of eye-opening. Look at that ingredient list. At the end of the day, is there even a reason to add something to the dish? I love what Chris said at the end there... "If you're not truly tasting it, maybe it's better just to leave it out." I realize he might have been saying that about what he added, but I think it's truer still for the original recipe...ha!
often, these little added ingredient is what makes the dish unique. It won't make it better by a lot, and probably no one would be able to guess there's kiwi, mint and sesame seeds in the dish, but that is where complex is. It's not fun to be in morocco shoes tho, it'll be too hard to pick up these hints of flavor, as it's over powered by others. I don't even read all the ingredients, but that's the charm of complex list. It's hard to replicate, and hard to read, but ultimately, it made the dish different even if it's only a hair different. Also delayne is mean, picking this recipe to test morocco
It's funny how, when Chris is grading himself along the way, he's off on the numbers for individual aspects, but his average of those is very close to the real grade.
This is mathematically a thing that is expected to happen in general. I am only pointing this out because I think it's neat! Observations like this are fun to think about.

i want to see them do a show where they have 3 samples of a dish with a complex recipe, and one of the samples has been simplified as much as a different chef chose. so here it would be 3 tacos, but one of them would be simplified by like andy or someone. and then see if the complexity is noticeable

The initial tasting is amazing cause Chris always says exactly the right thing then never goes for it. He picked out an Asian fusion element in the beginning and never went for it. This is one of the hardest shows ever but Chris’s good attitude is key.

The fact that Chris basically nailed the taste and appearance while missing half the ingredients speaks to the fact that the original dish had a ton of useless ingredients in it that didn't contribute to the final dish.
I completely agree!! If hes not tasting a specific ingredient, why does it have to be in the dish?
It reminds me of how the have basics recipes that have only 10 ingredients and they're all wonderful!
But he didn't nail the taste. And just because he can't identify an ingredient by its individual taste doesn't mean it's not contributing something to the overall flavor profile.
also, i think if he gets something close enough they should give it to him. for example when he added brown sugar and it just called for normal sugar i feel like that’s close enough. but maybe that’s just me 🤷🏻♀️

This was kind of eye-opening. Look at that ingredient list. At the end of the day, is there even a reason to add something to the dish? I love what Chris said at the end there... "If you're not truly tasting it, maybe it's better just to leave it out." I realize he might have been saying that about what he added, but I think it's truer still for the original recipe...ha!
often, these little added ingredient is what makes the dish unique. It won't make it better by a lot, and probably no one would be able to guess there's kiwi, mint and sesame seeds in the dish, but that is where complex is. It's not fun to be in morocco shoes tho, it'll be too hard to pick up these hints of flavor, as it's over powered by others. I don't even read all the ingredients, but that's the charm of complex list. It's hard to replicate, and hard to read, but ultimately, it made the dish different even if it's only a hair different.

I feel like this episode was so difficult, it kind of took a lot of the fun out of it. I think this concept works better where you have a dish with more separate ingredients rather than something like a sauce with a million ingredients all mixed together.
