chris has been getting more and more feral during these episodes. he'll end up having claire-esque breakdowns soon
Although he becomes exasperated very often, he takes a downfall with lot more dignity and good natured-ness than Claire. Ha makes for a good show in a slightly better style.

Sohla is that one friend who says they failed when they got a 90 but then proceeds to tell you how good your 65 is
she gave him a +20 to his ingredient score just because he is a friend. That was Chris's worst showing by far as far as ingredients go, there is no way that score should have been in the 70s let alone the 80s.

@@JamesBond-ox7hw I think they do Chris a massive disservice when he has his worst ever showing with the ingredients and they still give a score close to when he does great with the ingredients. It makes the entire scoring section of this segment worthless so they might as well remove it. And this was NOT a subjective score. This was a deliberately inflated score. Chris does so well at this, it is ok for him to have a mistep (and lets not even get into juddging on tasting by deliberately NOT tasting a large portion of the dish). But I guess this is the participation medal Americans like so much.

Right! I realized while watching their Thanksgiving series that they record their videos so far in advance.
They always film so far in advance before release, even not during the lockdown youll be watching a video in april and they'll casually mention it being christmas or something like that. This is all obviously a great thing in these times so hopefully they'll have plenty more videos which have been filmed and are ready to be edited and released
I'm going to say they film at least three videos per day. Which is pretty amazing
New idea for videos: randomly assign an old BA recipe to the chefs and have them try to recreate it as best they can using whatever ingredients they currently have in their houses. No one will have everything, and it will be fun to see how the chefs accommodate missing ingredients!

I love the way Sohla graded him and explained the procedures in comparison to what Chris did and made it a way a learning experience. It’s the first one I saw where it’s done so professionally.

As someone who makes gumbo all the time, this is fascinating. It's wild to see Chris know so little about a dish and still get so close on the first try; that shows me just how talented he is, but also how underrepresented Creole food is in the larger culinary culture.
The fact that he called it jambalaya throughout the video hurt inside a little lol but he did get close content wise!
As a Cajun, this gumbo looks terrible lol. I'm so glad I grew up on the western side of the state.
Right? As someone who grew up in the south, I was a little shocked that he didn't immediately know it was Gumbo with those combo of ingredients and how soupy it was. Very underappreciated culture of food in this test kitchen apparently! lol
I think cajun & creole food was huge in the '80s and big in the '90s, then other food became more fashionable.
But look at it this way - every medium size and larger city in America has a Creole/Cajun restaurant of some type. How many American have even heard of Low Country Cooking?

Idk if anyone will see this ... but this is relating to the crab thing at the end ... if u go to a good fish market that sells male and female crabs separately always choose the female even if they are slightly more expensive... they contain more meat

Frances Hart it was an honest attempt. I grew up way down south and don’t think I could have done this but it definitely hurt my Cajun heart at times
It's facinating, Cajun food has so many layers of flavour but really doesn't have that many techniques/ingredients to them blows my mind. I think Chris did great, since even looking at the dish I still had no idea how it was done until it was explained in the end.
I find it facinating that some of the tastiest cuisines have such simple techniques, like Chinese/Korean/Indian/Creole food are some of the best tasting stuff in the world yet a lot of it comes down to throwing stuff into a pot/wok and just let it cook out either really fast or really slowly
It’s crazy to me how under represented authentic Cajun and creole food is outside of south Louisiana. Or that there is actually a difference between the two, that few people outside of the area actually recognize differences (and that it’s more than just putting Tony’s on something). Creole vs. Cajun gumbo or creole vs Cajun jambalaya. We are always going to have our arguments about what the “correct” recipe is, but we all seem to agree that this dirty dish water attempt by both the BA folks and Chris just ain’t it.

Yeah, this always bothers me! Jambalaya is a dry rice dish. Gumbo is a wet stew-like rice dish. It's so simple.
I pretty much exclusively do gumbo when eating Cajun food, but I was thinking when he said jambalaya first l, “no, wait, I don’t think that thing is what you think it is.”
But anyone outside of Louisiana always try to make jambalaya wet. I can't even.
In the Midwest, jambalaya arrives at the soup counter next to chicken noodle soup. It's sad, but hey, who's going to tell Kroger how to cook jambalaya?
It's appropriate that the dish had sea food in it, because Chris did curse like a sailor in this one.

I really think Chris should know his score before his second taste! Even just if he's under or over rating his dish. Give him a chance to know if he's on the right track
I'd agree, though I don't know that whether he's under or over rating really would help, because he's usually overrating on his first attempt. But maybe like a banded score (i.e. whether he's within 1 letter grade, 2 letter grades, ect), if they don't want to make it too easy for him, since that still gives a lot of latitude about just how much he's off, but has at least some ability to measure how close he is.

@@mudkipjuice Virtually all food historians attribute to gumbo a combination of African, Native American and European, most notably French, Spanish and Italian origins. The Cajuns have gumbo and they're all of French origin. So you'll have to share it, it's not yours only. Bad try.

I love how that one bite of gizzard ruined Chris’ day for a second. He didn’t have to get pissed off at the shrimp he picked up afterwards like that, he was just gizzard grumpy 😂

@@itpaynesme A gizzard is like a little pre-stomach, it helps grind up and break down harder foods on their way to the stomach. Some different cultures eat them regularly, bc they have a lot of nutrients. A couple different animals have them (such as chickens). (Yes I googled it earlier)
@@itpaynesme - I believe it's analogous to a mammal's esophagus, but it's a bit more complicated. Chickens swallow sand and keep it in their gizzard to help grind food up.
Gizzard has teeth like strutures for grinding the food and present in most of the birds and also insects like cockroaches too

I mean, i think chicken neck is pretty recognisable if you ever had it. My grandma raises chickens and when she cooks chicken for the whole family, necks are always also thrown in there. I don't really enjoy to eat them as it's just mostly little bones and difficult to get the meat, but it's pretty recognisable in shape. No idea how common it is in the US or how recognisable it is if you've never seen it tho :p

She should keep quiet. The point is not for him to get the dish as close to the original as possible, but to investigate how close he can get using only smell, taste, and feel. Even if it means failure.

Gumbo doesn't always start with a touch. Tons of creole and Cajun folk skip that when thickening with okra and/or file.
He didn’t grow up in those surroundings he grew up in different food settings.

Fun fact: Leah Chase is the real life Princess Tiana! Disney worked with her to develop her character based on her own life and experiences. So, Chris really got to taste and recreate the food of a Disney princess!

I always wonder why Chris doesn’t blindfold himself again when tasting his first attempt. So many senses get dulled when sight is there. I think it would be a better test of true taste and experience if he mimicked trying the dish the first time when trying his own.
That and a taste test blind folded with his version and original recipe.
He's tried that before and looks like he's not a fan.

It’s so interesting that he’s letting his general knowledge of what gumbo/jambalaya usually consists of overpower what he’s actually tasting. He didn’t get any green pepper, celery, or tomato in any of his taste tests but assumed they must be included because, like Brad said, the “holy trinity” thing and jambalaya is generally in a tomato based sauce.
I really want to see him taste the two dishes blindfolded side by side instead of waiting so long between tastings. He’s got such a good palate and he’s so talented.

According to leah chase herself, trinity is used more often in cajun gumbo which is thicker and has more body to it, creole gumbo (which is what she specializes in) is thinner (almost broth like) and just lightly thickened with okra and/or file powder (edited: and of course the roux)
Andrew Felix Ferdaus a roux is still a pretty basic component. The dark preparation takes some of the thickening away. I’m surprised he missed the thyme. That’s a fairly distinctive taste. This was super hard with the number of proteins.

@@MrRossman2 text to voice! Phones and computers nowadays make things super accessible for blind people, but they might need someone to set up the phone initially and teach them how to use it.

@@MrRossman2 generally you move your finger around on the screen, and the phone reads out loud whatever words you're touching. There are UA-cam videos if you want to learn more, I'll reply with some good ones

He should study the usual methods for the cuisine. He gets that part right. If he read several recipes he would know some of what he does is the wrong technique for that type of food.

If you don’t know Leah Chase’s history, please take the time to read about her life! She was the Queen of cooking and was in her restaurant until the day she died. She loved Tupac and Patton and was sweet, sassy and as strong as they come.
She had many famous Black people in her restaurant including civil rights leader and even Barrack Obama came to her restaurant as President.
She is a New Orleans treasure. I’m kind of upset they didn’t have him make the gumbo Z’Herbes
