How to whip egg whites to SOFT, MEDIUM & STIFF peaks

  • In this video I'll be showing you how to whip egg whites to soft peaks, medium peaks (also known as firm peaks) and stiff peaks! Different recipes call for different types of peaks for important reasons, so it's a good skill to know as a baker. I'll also be showing you how to save overwhipped egg whites incase you take them a little too far! :)

    Finally a clear instruction how the egg whites should look in the different stages! Now I know I have over whisked my egg whites according to the recipes most of the times.

    Your info is valuable. Have you tried the pasterized liquid egg whites? I never in all my years of baking have tried them. But, keeping up with the new products in USA. I got a half liter. Online ppl say some cream of tartar or lemon juice must be added after a minute of whipping in order to get peaks. 🤗

      Glad to hear you found the video helpful :D I've never actually tried egg whites from a bottle but I imagine it should be fine. Yes cream of tartar or lemon juice does help stabilise the egg whites so are great to add too if you find that just using the egg whites on its own isn't working :)

    Please can one use the combination of ordinary egg whites and sugar or without sugar to decorate a cake

      Hi there! :) Not just egg whites on its own, although you can use it to make meringue buttercreams which you can use to decorate cakes :)
