How to Make Blackberry and Apple Crumble Wine

  • This takes our infamous Blackberry Wine recipe to the next level.
    If you love blackberry and apple crumble, then you are going to LOVE this wine recipe.
    Packed full of blackberry flavour, lifted by the apples, slightly tart, but thats counterbalanced by the mouthfeel & flavour of the crumble (thanks to the stressed yeast making diacetyl) and all finished off with the amazing vanilla combining with the creaminess of the lactose to make the custard.
    It’s amazing how you can taste every aspect of the pudding in this wine. You really get the blackberries, you get the apples, you get the tartness, then you get the pastry flavours and mouthfeel of the crumble. Then if that wasnt amazing enough, comes the gentle vanilla sweetness of the custard. A real pudding in a glass.
    It’s perfectly balanced, so it will keep you coming back for glass after glass.
    In this recipe we use techniques not normally used in wine making, but regularly used when making craft beers. So here I’m using my beer making knowledge to enhance a blackberry wine and take it to pure indulgence levels. You will LOVE this wine and I think it’s the best I have ever made!

    I've just bottled and so was able to sample, I was sceptical but it tastes amazing, sharp to start, then the custard comes through and the buttery aftertaste (which sounds terrible but is not at all) The family will love this on xmas day, nice one!

    Great video guy’s definitely be trying this one next year
    Can I ask why doesn’t Campden Tablets come in powder form just seems to make life easier 🤔 if this did

      Cheers. Give it a go. Campden tabs do come in powdered form - sodium mutabisulphite - but this is a measured amount specifically for 1 gallon (4.5 litres) so you don’t over dose.

    looks great, do you think this can still be done but skipping the lactose part?

      Yes, but it does need sweetening. Perhaps use a wine sweetener instead of the lactose. But the lactose adds mouthfeel and a creaminess to the finished wine. I expect it will still taste good. But if you could use lactose, it would be even better. Cheers.

    Did sort of do a version of your rhubarb wine..just done it today except I put all the rhubarb in my bucket…added 15ltrs of hot water …give it mush and 1 kilo of sugar ..want to see if I can get as much flavour I can out of the rhubarb…

      I found the stewing method really extracts the most flavour.

    I've got this on the go right now, 3 days in and it's fizzing away nicely, I have now realised I put in double the suggested malic acid, have I ruined it?

      Hi. It should be fine. Just a little more tart apple flavour. The lactose and vanilla will smooth this out later.
