- This is an extra special sweet treat for many Guyanese. It’s kinda like a dense cornmeal cake with a soft layered topping of coconut milk and sugar. It can be served as a appetizing dessert. It's a simple recipe, hope you will try this recipe.

Recipe for the baked Cornmeal:
2 cups coconut milk (canned/you can also use fresh coconut milk)
1 cup carnation milk
1/3 cup half and half (optional, replaced with carnation)
1/2 cup brown sugar
1 tsp vanilla extract
1/4 cup melted butter
2 cups cornmeal (fine grind)
1 cup self rising cornmeal mix
1 tsp ground nutmeg
1 tsp ground cinnamon
1 tsp ground cloves
1 pinch salt
Whisk all the above for 2-3 min until batter is smooth
Water bath bake 375 degrees for 32 minutes
Recipe for Topping:
2 cups coconut milk
3/4 cup granulated sugar
1 tsp ground nutmeg
1 tsp almond extract
Pour this mixture onto baked cornmeal with broiler on low middle rack 15 mins, top rack broiler high for 3 mins

Thanks. I will try this. For fresh coconut milk I put the chunks of coconut from a fresh coconut into a blender with a little water, blend, squeeze, drain the milk and repeat. I also freeze some chunks. When I need fresh milk I put some frozen chunks in the blender with a cup of warm water, blend, squeeze the finely chopped coconut etc.
