Guyanese Fat Top / Corn Pudding

  • 1 1/2 Cup fine corn meal
    1 Cup sugar
    2 Cups coconut milk
    1/2 Cup powder milk
    1 Tsp Nutmeg
    1/2 Tsp powder ginger
    1 Tsp mixed essence
    For the top
    2 Cups coconut milk
    1 Cups sugar
    1/2 Tsp mixed essence
    1/2 Tsp nutmeg
    Bake corn meal mixture for 20 Minutes at 350F then add coconut milk mixture for the top , bake another 30 Minutes, completely cool down fat top before serving

    I grew up at 79 village a African lady use to sell it n it's been over 30 years I didn't had it now I try it n I couldn't get it right the top was no fattyness lol will try again

      We used to buy from her too. They normally walk sell too on Sunday in Crabwood Creek. It was the best I ever tasted.

    I had in Port Mourant from the market. LOVE IT 😋 I’m from East Bank Berbice.
    Dad was from the Corentyne.
    Living in the US now, I’ll make it for Christmas 2020.

    Hi girl, just saw your fat top , I will definitely make this , I left Guyana 40 years ago but still remember the fat top on a hot day at Skeleton market I am from Berbice 64 village we are a large family I am going to try this my self hopefully it as good as yours then I will surprise my family with our next gathering… thanks for your beautiful recipes love your attention to detail, Blessings to you and your family ❤

    OMG. I was trying to explain fat top to my in-laws whose from east coast, they looked at me as if I stupid. Now I can show them your video. My favorite sweets to buy when I was living in Guyana. Thanks for sharing.

    Hi ash... I'm from corentyne and my mom bake cake and sell in port mourant market for almost 23 years now... we call it corn pone, soft cake or fat top... this video reminds me of my teenage day when I had to help my mom great coconut...

      Hi hun thanks for letting me what u know it as , my dad family is from fyrish( if that’s how it is spelt ) I had an aunt that used to live in port Mourant her name was Narmia she used to sell at the market, when we would visit I remember they would buy this for us and it was so delicious 🤤

    My mom made this all the time as a child we loved it my older sister still do I just can't get it right but I never see my mom back take out and add milk on top yet she will mix everything together and bake when it's done it has that golden brown fatty jellyness on top I think it is the ingredients that make the difference she will use the fresh grind corn and the half dry coconut which gives you that thick milk that makes the difference but good job girl

    Love your nutmeg grating. L😘😆 When people ask for recipes, as a Guyanese I find it difficult to give exact measurement so thank you. I say these are the ingredients and punch of this little of that.
    'fat to' in Canje as well. Segue, have you ever heard of the Sri devi sugarcane? 😂 When I was eating it and my uncle told me it is called Sri devi sugarcane because it sweet, thick, juicy, soft and sugary. I wonder how that comment will be received today. 😂🤔. (he meant it in a nice way)

    Hi Ash iam going to try your receipt for the fat top cake i also from Berbice Guyana Canjie I also love fat top cake my sister and her husband has a baker shop in Canjie berbice they live in God Bananaland his Mother family lives in Frish contynee berbice they sell cakes y breads in the market for many many years ago

    Hi Ash .. will be making this fat too ..my grands parents were from Fyrish ..they were bakers ..used to sell all their products including the famous fat top at quite a few markets around there and the shops too used to carry their products.. guess u has their Fat top ..they are the Bacchus family

      Hi hun well maybe I did have it from your parents my dad's family used to live in Fyrish and that is how I know about this they used to buy it for us maybe you might know them the Bux’s, I’m not don’t know the name doesn’t ring a bell we never live there I just used to visit with my parents

    I lived at Albion Front in the ‘70’s ... there was a lady from Fryish who made all kinds of sweets and brought to Albion market on her donkey cart - I believe her name was Aunty Finey. Hers was amazing ... top was all jiggly with ooeegooeeyness. Fat top/corn pone 😍😍

    My mom made this all the time but she never bake and then add milk on top bake again I think it is the fresh cornmeal and the half dry coconut which has a thicker milk texture she will mix everything together and bake when it's done the top had its nice golden brown faty jelly top I guess the ingredients make a difference I mean the type of cornmeal and coconut 🥥

    This is got to be a small world my grandmother sister they use to make fat top and they from kicoy dam her name was Aunt finney she was dark skin then you might know uncle eddo and that is where we know fat top from

    I am from region six and I had it in Albion a man just sell with car but it does not taste good you one looks more delicious
