This is traditionally made with "yellow cheese"...cheddar cheese. We make everything with cheddar. It was/ is a English/ British thing. But Edam, (dont know if Gouda was) imported to Surinam form Holland, and was available in Berbice, and it was mostly a Christmas treat, not something you would cook with as it was too expensive. Even today Real Edam and Gouda is a lot more expensive in the U.S and Canada than cheddar.
I will definitely try your version of quiche! They look delicious!! I want to ask about the evaporated milk. What is the advantage of using it instead of regular milk? Evaporated milk is difficult, but not impossible to find here in Sweden. Is it an essential ingredient?
Hi dear the evaporated milk is more rich and creamy because half of the water content in it is cooked away and removed, hense where the name evaporated came from. Regular milk is more watery. But if you can't find evaporated milk just use half whole milk and half cream or go with just whole milk it will still be good.

In guyana we use new Zealand anchor cheese not cheddar. that's why i used something that looks similar and is more available here in my area.
