  • Welcome to this month's Roaster's Choice selection with Gareth on the shores of Derwentwater in the beautiful Lake District. This coffee should be arriving with our Subscribers on Saturday 9th March (the remainder will be on general sale next week).
    In the coastal region of Mexico known as Veracruz, sits the infamous coffee-producing area, Ixhuatlán del Café. With its climbing elevations, historic artifacts, and rich volcanic and clay soils - Ixhuatlán is home to a collection of coffee producers and the Santuario Project, where this lot comes from.
    It's a fascinating coffee that uses the natural, anaerobic fermentation method. In this video we explain how this process works and how this affects the flavour of the coffee. We also look at how brewing method can affect the flavour, in our case today using the Aeropress XL which we were out testing (another video on that to follow!).
    The Santuario staff are dedicated to quality assurance, regularly monitoring the harvest and each step of processing to ensure excellent quality is maintained. Working with these producers reveals how special the coffee is in this region of Mexico, and why members of the Santuario Project seek to preserve this historic coffee-producing community.

    Just had a cup brewed in the clever dripper and really enjoyed it, bitter sweet grapefruit, absolutely delicious
