Years ago, I read leaving an espresso sit for more than 10 seconds it starts deteriorating. Also, if you start to poor the milk from higher it will give you a darker surface for your art.
You've got a fancy scale, and for some mysterious reason weigh your beans before and after RDT, but you aren't using it to weigh your espresso output? Bit weird, no?

Think your grind was too fine. No way you got 36g out on that shot in 30 seconds as the throughput was very slow. Same machine and got the df83 here. Lovely setup though!
