Sugar-Free Cowboy Candy | Pros and Cons of Using Allulose in Home Canning

  • This is the one many of you have been asking for! Whether you are keto, low-carb, counting calories, diabetic or fighting cancer, it can be important to not constantly feel like you're missing out. For us, Allulose has been a real game changer, opening so many more "normal" options.
    Just to be clear: Allulose has not been tested by the USDA for home canning. I am sharing what I do in my kitchen. Please do your own research, and make your own decision.

    My recipe:
    Sugar-Free Cowboy Candy (makes 7-8 half pints)
    3 lbs jalapeno peppers
    2 cups apple cider vinegar
    5 cups Allulose
    1/2 tsp Turmeric
    1/2 tsp Celery Seed
    1 tsp Mustard Seed
    1T Granulated Garlic
    Directions: Slice jalapenos into 1/4" slices, and set aside. Heat jars in hot water bath or steam canner. Combine remaining ingredients in large pot. Heat over medium heat until it comes to a gentle boil. Reduce to simmer for 4-5 minutes, until Allulose is dissolved. Taste for seasoning, and adjust as needed. Add sliced jalapenos, and stir frequently as they cook down for about 5 minutes. Remove jars from canner. Load with pepper slices, reasonably packed into jars. Add brine to 1/4" headspace. If you have additional brine, can that at the same time! Clean rims, add lids and rings.
    In water bath canner, bring to full rolling boil, and process for 10 minutes (at altitudes below 1000 ft. See chart below for adjustments for various altitudes). Once processing time is complete, turn off burner and remove lid from canner. Let sit 5 minutes, then remove jars to heat safe surface. Let sit undisturbed for 12-24 hours, then remove rings, test lid seal, wash jars, label and store.
    In steam canner, wait for canner gauge to reach the appropriate level for your altitude, then start timer for 10 minutes. Once processing time is complete, turn off burner BUT leave lid on canner. Let sit 5 minutes, then remove lid and move jars to heat safe surface. Let sit undisturbed for 12-24 hours, then remove rings, test lid seal, wash jars, label and store.

    I have made cowboy candy using jalapenos that I had dehydrated. When I had run out of cowboy candy in the late winter I decided to try it... just soaked the dried peppers in water and then proceed with processing, it worked out great and no one could tell I didnt start with fresh peppers...

    Allulose is considered a “rare sugar” because it exists in very miniscule amounts in nature. You’ll find it in jackfruit, figs, raisins, molasses and maple syrup, but to extract it from these sources is not cost-effective. So we turn to science to lend a hand! Thanks to the work of Ken Izumori[1] and fellow researchers, we are able to make allulose widely available by converting the starch in corn and wheat.

    You introduced me to allulose in canning, and I love it. I made pie filling this year with allulose, and I’ve made jams also. Everything turns out great, and it does not taste artificial.

      Hey, Penner! I don't use ClearJel (never have). My guess is that a very light amount would thicken up the brine, but it might also impact blood sugar, if you're watching it closely. Please let me know if you decide it's something you're going to try. @teampenner538

    I dice most of mine so I can use them in potato salad, deviled eggs, tuna salad, chicken salad, as a relish on hotdogs or hamburgers

    What a find for those of us battling diabetes! Allulose, I had never even heard of it. I just did bread and butters, wish I'd seen your video before canning with all that sugar. A couple weeks for jalapenos here, will make one batch with Allulose and another with sugar for a head-to-head comparison. David is constantly amazed when I tell him things are sugar-free. Do double check your blood sugar with allulose. It does not move mine at all, but I am not diabetic, rather I am keto.

    I believe this is the same recipe i use for cowboy candy. I used allulose this year too. In fact, thats just about the only sweetener I use in canning! I can the brine as well, but didn't have extra this year. Thank you, Carter!

    I am so excited for this canning recipe. I M not supposed to eat sugar either. So, I have been making my Refrigerator cowboy candy and just keep refilling brine with fresh uncooked Jalepenos as needed, they are wonderful, they are crispy and sweet, I use Pyure Sweetner in mine, so good. But want to have Canned on hand also! Thank you so much, looking for all your s.f. and reg. canning recipes also!!! I'm a new subscriber from the great state of Texas! 💗👩🏼‍🌾

      Thanks, Lynda! Most of the recipes on my channel use Allulose in place of sugar. The pecan pie recipe is full sugar. The bbq sauce recipe includes honey and allulose. I think the rest of the sweet recipes are made with Allulose.

    I used erythritol one day using Truvia and I though I was going to end up in the ER. My BP went to 235/112/100+ at one point and started having 'lights' in my brain.
    Then I did some research and SUPPOSEDLY it is bad for people with seizures (oh, well) and something about causing clots in vitro. I tried it again, just to make sure it was not me having one of my issues and by gally, the same thing happened. So I threw all the Truvia I had purchased in the garbage and have not had another episode since and I have told my friends not to use erythritol. I use xylitol (Boccha) and allulose separately. Have not tried to use it together and see if my body does not go into conniption.
    Watch a YT that all of a sudden (it was because of her I tried Truvia) she started in three consecutive videos saying she was having issues with her seizures. I told her what I have explained above and asked her to please, please stop using Truvia as I believe that that was what was giving her issues as it was AFTER she started using Truvia that she started talking about seizures. One of her last videos she talked about they were trying all different meds to help with her seizures. She did NOT use meds previously. She took care of her seizures only by her died and then she starts using Truvia and she starts having seizures. I begged her to stopped using Truvia but I do not know if she will stop it or not.

    Our peppers really failed this year! Maybe next year! I spent 8 entire days cleaning my pantry and organizing taking inventory etc. I am soooo happy now I can find everything I need in seconds. Already opened 10 jars! I had been complaining that I knew I had it, but could never find it! So now meat is in a section, fruit in one, and veggies in another. Condiments got moved into the kitchen and spices into their own cupboard! So easy now to fill in!! Looking forward to your next video. Today I'm baking bread and a blue berry pie filling cobbler!

    Love this info on allulose. I do have some but haven't used it much. My go to's for canning are xylitol from birch trees and bochasweet. I would use all bochasweet but way too expensive.

    I have made cowboy candy for years. We love it. The high sugar content is not good for the diabetics in my family (including me). I am going to give this recipe a try. I have used the swerve in baking but have never used allulose. Yay! I have a new project.

    Cowboy Candy look pretty in the jar. I received my Presto Electric Canner and it a thing of beauty. But the one thing I must have missed hearing you say, "this thing weighs as much as a Volkswagen." Ha ha . I was so shocked. Hope it fits in one of my cabinets.     I really enjoy how organized you are. I get impatient with this trend from UA-camrs that will say, “well, this and that goes in but I forgot to buy it and even worse it’s in my basement but I didn’t feel like getting it.” Give me a break!     Thank you for this recipe. I have been unable to eat sugar for 40 years and wished I could try Cowboy Candy since everyone who made it raved about it. Yesterday I made half a batch since that was all the peppers left in the garden but darn it, every jar sealed so I can't try a nibble. It is against my rules to open a just sealed jar of anything (drives me crazy). I will save it until all the family visits so we can sample it together. Any excuse for a family get-together which involves a meal is fantastic.

      I am looking forward to trying all of your meals in jar recipes. I can't ever eat out (allergic to many things) so before my husband and I leave for errands, I must pack a lunch. My canned chili has worked great as a fast choice. I open a jar, heat it in the microwave, move it to smaller bowls, and then put it in a tiny cooler. He wants chili every time (carnivore) but I am looking for variety. He tries to be positive when we eat our picnic lunch and says cheerfully "$40 saved by not eating out." I sigh, correct him, and tell him it is $50 saved. He forgot about inflation.

      Sometimes it is so hard to pin down what our particular issues are. It's great that you have such good insight into what you can and can't eat. Hopefully your banned list will reduce over time. I was egg free for 7 years before I could add them back into my diet. I have been dairy free since 2012, and I'm just now (successfully) reintroducing goat cheese, and I found one brand of ghee that works for me. It's a journey! You are so right about inflation! It's easily $50 to go out lunch for us too. That's just so hard to justify when you can make better food at home.@@jeannie.getmetothecountry8708

    Thanks so much for sharing this info! I've already made cowboy candy with sugar for this year but will definitely try this next year. I wasn't sure how much allulose to use or if it would work for canning. I tried using Monk Fruit w/Erythritol for homemade ice cream and that was a total fail. The ice cream was very grainy and hard as a brick

    Can you buy Allulose in bulk? I'm newly diagnosed as Type 2, would love jam for my keto bread.

      Azure Standard has it in 5lb and 55lb bags. I haven't tried theirs yet, but I may do that coming up. The biggest one I see on Amazon with good reviews is 3lbs, for the same price/ounce as the 2lb bag that I buy. amzn.to/46B64Fh. You might try one of the smaller bags first to make sure you like it and that it has no impact on your blood sugar. I think you will find a huge blessing. Please keep me posted.       You could probably add a few, as long as you double check that the pH is 4.6 or below before jarring it. Onions are slightly more acidic than jalapenos, so you don't want to risk bumping it too high.

    Made these for my hisband who loves hot stuff. I used the sweetener you used because hes a diabetic. Just left him try them. LOL They are too hot for him! LOL

      Thanks, Linda! The recipe for enchilada sauce is giving me some issues. There's a gentleman who was helping me with some work for my mother. I showed him the base recipe I was planning to use. He chuckled and said, "that is not the way we make enchilada sauce in Mexico. No tomatoes!" Well, shoot. Still working on it. I may end up with some kind of hybrid version this year to hold me over.     Lol, I made this a couple weeks ago and there was a lot of brine left over so I canned it to use for meat. Allulose is too expensive to just dump. I was wondering if anyone else does that - I had to laugh when you held up your jar of brine.
