As a cook I can say that we don't typically temp the burgers, as they're thin enough to tell when they're cooked through (we do temp at least 1 chicken tender per batch to ensure it gets above 160°F, as chicken generally has a higher risk of food borne illness) (also keep in mind that this is just my experience working in kitchens, different standards may apply elsewhere )

Not really. If you want it cooked to a specific temp. Some people like theirs medium rare some medium and some well done. Then even some people like them rare. Which is disgusting to me. I’ve had rare burgers before. So gross. It is recommended to cook chopped meat to 160 which is well done due to possible food born pathogens. Unlike steak which nothing can penetrate the membranes, chopped meat is all mixed up; so any bacteria on the meat can be mixed in. I always cook mine well done. They come out juicy and delicious.
