  • Raspberry Pretzel-less Salad
    This dessert is easy to make, lower in carbs and delicious! You can make this with any combination of jello & berries you’d like. You can leave the berries out if you don’t want them or wish to cut the carbs even more. I decided to make mine with raspberries since I have so many out in my garden.
    RECIPE - Makes 12 pieces
    INGREDIENTS:
    1/2 cup chopped walnuts
    1/2 cup chopped pecans
    1/4 cup almond flour
    2 Tbsp golden monkfruit sweetener
    3 Tbsp melted butter
    4 oz softened cream cheese
    3/4 cup heavy cream
    1/4 cup powdered monkfruit sweetener
    1 tsp vanilla extract
    1 tsp lemon juice
    0.6oz box of Simply Delish Raspberry Jel
    1/3 cup cold water
    1 & 1/3 cup boiling water
    1/2 cup fresh raspberries
    DIRECTIONS:
    1. Preheat oven to 350 degrees Fahrenheit.
    2. In a food processor, pulse the nuts, almond flour and golden monkfruit sweetener a few times.
    3. Pour the melted butter in a greased 8x8” baking dish. *If using silicone, there is no need to grease it.
    4. Stir the chopped nut mixture into the butter and stir well to combine.
    5. Press the nut mixture into the dish to completely cover the bottom and then bake for 10 minutes.
    6. Remove from oven and place in the freezer to cool quickly.
    7. While it’s cooling, prepare the cream cheese layer by mixing the softened cream cheese, heavy cream, powdered monkfruit sweetener and vanilla extract.
    8. Whisk until smooth and thick and then stir in the lemon juice.
    9. Spread the cream cheese mixture all over the cooled crust making sure it touches all sides of the dish.
    10. Place in the fridge for a couple of hours to set.
    11. Once it has set, prepare the jello topping by mixing the jel with 1/3 cup of cold water in a bowl until dissolved.
    12. Stir in 1 & 1/3 cups of boiling water and then add in the raspberries. Mash if desired.
    13. Let it cool for just a few minutes and then slowly pour it over the cream cheese layer.
    14. Place it in the fridge to cool and set.

    *I used a 0.6oz box of sugar free jello called Simply Delish Raspberry jel as it does not contain aspartame. You can buy it in most grocery stores and it’s even sold on Amazon. It’s not crazy expensive either…mine was $2.69 at Giant Eagle.
