Servings: 1
Ingredients:
2 cups raw pecans (you can use roasted too, just skip the first step)
4 tbsp butter
3 tbsp sweetener
1 egg white
1 tsp vanilla flavor or 1/2 tsp vanilla extract
2 tbsp water (total)
Dash of cinnamon
Dash of sea salt
Directions:
1. Roast pecans in a 350F oven for 10 mins and let cool
2. In a bowl, separate egg yolk from egg white
3. Whisk egg white and 1 tbsp water until foamy. Add cooled pecans in and mix into egg whites
4. Line baking pan with parchment and add pecan egg mixture and roast at 350 for 10 mins.
5. Make your caramel by getting out a saucepan and putting it on low to medium heat.
6. Add butter, sweetener and cinnamon and remaining water mix until combined. Set aside.
7. Take pecans out of the oven and mix. Put back to roast again for 5 minutes
8. Take out pecans and heat up your candied sauce. Pour pecans in and mix. Add back in baking pan and roast a final time for 5 minutes.
9. Take out, top with sea salt and let cool! Enjoy!

Hi again !!! I made these last night !!! I had fun making them and they were delicious. You were right to not taste until cooled down. I had a couple out of the oven and I didn't like them but after they cooled for about a hour they got crunchy and the sweetness came through !!! Great recipe !!! ♡♡😘

I just made them and used the granulated monk fruit sweetener I buy at Costco. Measures like sugar (of course, still doesn't taste quite like sugar, but that's the sacrifice we must make!). Pecans are delicious!
I love this recipe! I split the pecans and did one cup of with the cinnamon/vanilla and the other cup with 2 tablespoons of sugar-free Torani caramel syrup. Both came out great!

larry caulkins No, I still used the sweetener (Swerve). I used the Torani salted caramel syrup instead of the vanilla and cinnamon for half the batch. So for one cup of pecans:
1 1/2 Tablespoons Swerve
2 Tablespoons Torani Syrup
I made mine with sliced almonds & on the last 5 min oven, I added lillies sugar free chips...O. M. G! Sure fixed my sugar craving! Thank you Myra for all your wonderful recipes & how easily you explain things, love you!💜

Not sure if this helps, but this is how I make my candied pecans every year for Christmas. This might cut down on time and they do come out soooo good!
Preheat the oven to 350 degrees F. Line a large baking sheet with sides with aluminum foil. Pour 1/4 cup of melted butter onto the lined sheet. In a large bowl, mix 1-2 egg whites, 1/2 cup of sweetener and 1/2 tsp cinnamon. Add the pecan halves and toss until they are fully coated. Spread the pecans onto the baking sheet. Bake for about 20 minutes, stirring the pecans every 10 minutes. Cool on the baking sheet for 10 to 15 minutes before serving. It does not contain vanilla or salt in the recipe, but you could definitely add it. (The original recipe I use is not keto friendly lol)

This was delish. Thank you! I added nutmeg and brown sugar (erythritol) and it was amazing. The only thing I’d do differently is fluff up the egg white a bit more. Then it’ll incorporate and cook a wee bit better. The first time for me it developed egg pieces on the pecans-but overall an excellent recipe!

I have been wanting to make these. I saw them on your instagram page. I used chopped walnuts. The first roast of 10 minutes went well, after i added the egg whites and popped them back in to the oven it started to slightly burn after 3 min. I took them out immediately and sauced them. I didnt leave for too long on the last two steps because I didn't want to burn the batch. I also lost some walnuts along the way during the transferring process.
End result, delicious. Would I do it again? Absolutely!
So I burned my first 2 cups of pecans which made me Very sad😥but thank goodness I still had a cup and a half left. My caramel wasn’t as thick as yours but everything worked out in the end! I’m doing this in prep for your other recipe for honey walnut shrimp which is...WAS one of my cheat meals! Now I can eat that too thanks to you sunshine😘🌈
