I share the same opinion as your, Christine. My mom often makes pho at home whenever I crave it. She even gave me the recipe to cook on my own when I moved away for university. Strangely, despite following the steps, I couldn't replicate the taste. I believe our mothers all add a special seasoning - love, an irreplaceable flavor which can be found nowhere else.
Badass christine! After being on a huge Hells Kitchen / Gordon Ramsay kick watching every night with my boyfriend, we started getting UA-cam recommendations for master chef videos with you on it. I decided to start watching your season for the first time ever and I LOVED it and you! My boyfriend normally gets up and walks away from Hells Kitchen, but he fell in love with you and kept saying “where’s Christine I just want to see her in the show!” Also every time you mentioned Fish Sauce I remember Monti talking about how it smelled 🤣 much love from Horseshoe Bend, Idaho 🤍 can’t wait to visit your restaurants sometime!
A twist on her recipe from my dad. 1- Don't put fish sauce at the beginning, only salt. Simmering too long with fish sauce can turn the broth sour. 2- Add some roasted black cardamon, smash it after roasted. 3- For that big pot, she probably needs twice the amount of spices there and only put 45m-1h before serving. The flavor dissipates if you simmer for too long. 4- Seems like she roasted some of the bones, that'll turn the broth dark. Best would be soaking the bones in water with some salt for 5+ hours before parboiling. That'll remove some of the blood and impurities. 5- Add fish sauce to taste before serving and some MSG. Pho won't taste as good without MSG. 6- Add 2-3 tea spoon of fat from the top to your bowl, it's where all the flavors are concentrated. It's a completely different bowl with the fat. Happy cooking !

I used to love to cook, from stirfries to pasta sauce to fried chicken. Unfortunately, now that I can’t see, I don’t cook at all. my husband has taken over the reins in the kitchen. Hopefully you’ll put out more videos. I think it has been five years since you put out a video. I follow your progression through MasterChef season three when I could still see.

This pho recipe sounds amazing, but unaffordable on my budget. If I ever wind up in Texas, I’ll definitely visit your restaurant and borrow and friend’s credit card.
I've always wondered about Japanese method of making soup broth And Vietnamese would work. They make dashi with kombu and dashi. I don't know, maybe it will work.
This person obviously doesn’t understand about being blind or visually impaired people. People confuse Blindness are being visually impaired with other people that have vision problems that need glasses to correct it. If you are find or visually impaired, you obviously have other vision issues that cannot be corrected with glasses or contacts. if you search the UA-cam, you can find videos on Christine’s life where she will explain how she lost her vision. I am also a blind person. There are many eye diseases out there, which will rob you of your vision maybe only partially or make you fully blind.

Nice tips. We didn’t roast any bones and added fish sauce towards latter part of cooking. Agree about msg 😉

Great video! One feedback though, I think the noodles are rice vermicelli. For pho we need flat rice vermicelli, correct me if I'm wrong though!
For pho you should use banh pho or a type of rice noodle but flatter than vermicelli
