    I used to make hot sauces for the company I work for and my favorite was by far the Habanero Lime Yellow Watermelon and Honey Dew.
    If anyone is in Delaware maybe I'll make it again and you'll be able to try it 👌

    Just a heads up for anyone, generally 1ml of water = 1g, so it's an easy conversion when making the salt brine.

      You should honestly do a 1% salt for the total weight, including the peppers

      @@mattezuka1274 1% is risking botulism, which will kill you. 2.5% minimum. I use 3.5%. And yes, total weight, not just water weight.

      You could definitely give this a shot with bell peppers and other flavorful aromatics. Sauce wouldn't end up spicy, but it would still be super delicious!

    That's nice that you had your grandmother taste test to see what's needed. I usually or all the time do the same when I'm making something super hot, since my grandmother likes anything spicy. So in the end, it's good help and advice

    Hey, if you're heating the water only to dissolve the salt, you don't have to do it. Heat doesn't help salt dissolve almost at all :)

    How long can I expect to keep this before I have to use it up?

      It all depends. If you can it properly (and use Xanthan gum), it can last for several years in your fridge. After opening, I usually try to have a bottle eaten within 6 months... which is always easily doable. Keep in mind though, if you don't add some Xanthan gum you are going to start seeing separation in your sauce after a bit of time passes and it's really not appetizing.

    I might do something similar with habaneros, jalapeños, carrots, and garlic and them adding some chipotle, arbol, and mango to the blender after the ferment

    You should really invest in an induction burner. Gas stoves are bad for your lungs and the environment.
