First I have to say Florida State cap FTW! I would like to try this in the air fryer...I don't want the frying cleanup! I have a home garden and I grow my own eggplant, in fact I can grow most of these ingredient's with the exception of the cheese. I love recipes where I can go "shop my garden" for a meal.

Eggplant is usually coated in some salt first to take out the bitter taste, then wiped off before cooking, do you do this?
I used to, but I found that it really didn’t seem to make much difference in the taste for me, so I just don’t do it anymore. 😬
