How to Make Ochazuke from Princess Mononoke | Feast of Fiction Anime Food In Real Life

  • Today we've got a simple and easy Ochazuke recipe from one of our favorite Miyazaki Films "Princess Mononoke".
    INGREDIENTS
    1 salted salmon (or ½ fillet of salmon and pinch of salt)
    1 cup cooked Japanese short-grain rice
    1 tsp Japanese rice crackers (Bubu Arare)
    1 tsp shredded nori seaweed
    ¼ tsp toasted white sesame seeds
    ⅛ scallion, cut into small pieces)
    Wasabi (optional, for taste)
    Pickled plum, umeboshi
    Salmon roe (Ikura)
    Hot Green Tea
    INSTRUCTIONS
    1. Bake the salted salmon fillet (shiojake) at 400F degree for 25 minutes. If you’re using regular salmon, season the salmon with salt and set aside for 10 minutes before baking. When it’s cooked, remove the skin and bones and break up the salmon flesh into flakes. Set aside.
    2. If you don’t have Bubu Arare, crush rice crackers into small pieces (you can also use a bag to crush it).
    3. Ochazuke with Green Tea (You can substitute with Dashi for a more savory dish): Boil water and prepare Green Tea in a kettle.
    4. Now serve the cooked rice in the serving bowl. Place the shredded salmon and sprinkle the rice cracker, nori, all additional sides and finally sesame seeds on top.
    5. Pour the Green Tea until it covers half of the rice and Enjoy!

    This was a lovely ochazuke, but I think what Ashitaka ate in Princess Mononoke is okayu, a kind of rice porridge.

      Agreed. It wasn't ochazuke, but more of a rice porridge/congee. Princess mononoke is one of my favorite movies. Fof better correct this mistake.

      It's zosui...bit like rice porridge but more soupy and brothy with whatever vegetables you have in the house.
      Also, okayu, which is usually just plain water and rice with salt and pickled plum added after is usually eaten when somebody is sick or ill. Zosui I believe was like a wartime dish as you can make a big portion without that much rice.

    Pretty sure Jigo makes a rice porridge (miso okayu) as during cooking he takes out a package of a desaturated orange paste, which is likely red miso paste. This, however, is a really nice version of ochazuke, which was the last meal of Sadako Sasaki who became a symbol of hope and the movement against nuclear weapons.

      Not with that attitude. Out of all the ingredients in this episode the salmon is the most expensive, and you can easily replace it with a much cheaper white fish.

    Princess Mononoke is one my favorite movies along with spirited away & Kiki delivery service & howl’s moving castle I have all those movies on vhs still so watching y’all cook this brought back memories from my childhood I think I’m plug up my vcr an watch those movies tonight great video keep up the hard work

    @Feast of Fiction japan does have its own version of congee. It’s called okayu and has a different water to rice ratio than congee

    This looks so good - it reminds me the time when I had it at a place I went to a while ago. At least this recipe I won't get complaints for making at home! 🤣 (we regularly have hot water over rice with leftovers at home so this isn't too far a stretch)

    This looks very tasty I could substitute the salmon with chicken, add onion, rice crackers, with tea. Simple an easy recipie that even I could make.

    I was hoping you both could make a recipie from “My Roomate Is a Cat.” In one of the episodes Saburu makes “Haru”(his cat) a nice warm chicken dish. He also makes himself some, and it looks tastey. I was hoping you could bring that dish to life. It even has ingredients written down for u in an episode

      I just made it, and it wasn't bad. Not amazing, but very fast and simple. A good middle-of-the-week meal. I recommend using more than just a pinch of salt on the salmon. Give it a generous salting :)
