im not 100% you are wrong, but it seems to me like you are putting the male pins in the female plug and vice versa. If you look at your 9:54 mark you can see the back of the metal is nearly flush with the connector housing. If you flip flop what metal plugs you put in the plastic housing everything is recessed properly (and the same on both ends). it would also make sense that the plastic housing functioning as the male end would have the male pins in it.
That's all well an good but what do you do if connectors don't have that deep dish to put solder into.. what if those ones that are only a half tube, I guess you could still do it just not as much
Should you also melt the solder on the wire also there is a good chance of a dry joint

He has them in the correct ends.
Male connector should insert from back of connector.
