I went to a sizzling platter restaurant a few years ago and they served these for dessert. I never had molten lava cake before that so you can imagine how I felt when I bit into it and burnt my tongue with the molten chocolate.

you dont need the bowl to actually float on the water when you do a double boiler, it can just rest on the sides of the pot and the water under will be hot enough to melt the stuff, it's more stable that way
Not just do you not need to have the water that high, you really shouldn’t. It’s best if the heat only transfers into the bowl through the steam; otherwise it can get quite a bit hotter than the gentle heat intended from a double boiler.

@@Zavendea No. The point of using water/steam to transfer heat is that it cannot get any hotter than its boiling point at your local atmospheric pressure (higher elevation = lower boiling point) unless it's in a completely sealed vessel. The reason for having a lower water level is that it can (usually does) gurgle out between the pan and bowl as the water boils. A lower water level is less messy. That's all.

The restaurant ones do. It's very distinct in flavor and if they didn't reheat it properly it's just a chunk of chocolate in the middle of warm cake.

I've never been one to enjoy dough and we're talking about undercooked egg here. Egg doesn't have a huge chance of contamination but it's bad when it happens.

Made this yesterday, here's my observations:
- I overcooked it so it became a normal cake instead of a lava cake
- Seriously, do not leave it for more than 10 minutes
- The non lava cake tastes very mid while warm
- The next morning it tasted amazing tho, super fluffy
- Definitely use dark chocolate, the taste is divine
