    The traditional London Cheesecake consists of puff pastry layers filled with frangipane (an almond-flavored filling), a blob of jam, and is topped with icing and young coconut however desiccated coconut, seems to have crept in. The combination of flaky pastry, sweet frangipane, fruity jam, and coconut creates a delightful texture and taste experience.
    While the exact origins are unclear, the London Cheesecake has been a staple in British bakeries for many years. It was particularly popular during the mid-20th century, a time when bakery items were a common treat for families.

    Taking Cooking food back to basics.
    Ingredients:
    For the Pastry Base:
    - 1 sheet of puff pastry (or shortcrust pastry if preferred) cut into 4 squares 4 x 4 ½ inch
    For the Frangipane Filling:
    - 100 grams unsalted butter, softened
    - 100 grams caster sugar
    - 2 large eggs
    - 100 grams ground almonds
    - 1 teaspoon almond extract
    - 2 tablespoons plain flour
    For the Topping:
    - 4 tablespoons raspberry jam (or your preferred flavor)
    - 100 grams desiccated coconut
    - 100 grams icing sugar
    - 1-2 tablespoons water
    - Optional: a few drops of vanilla extract
    Preheat your oven to 190°C (380°F).
    Air fryer 180°C (360°F).

    This made my day seeing these as the recipe for today! I haven't seen these in decades. I'm now 60, grew up in London and these were a common self item in high street bakers. I adored the little spongey bit in the centre with the coconut strand icing top. Divine. I always knew these as 'cheesecakes', never 'London cheesecakes', and we didn't have a cherry on top so this is a nice addition - I adore glace cherries and would always steal these out of my old nan's cupboard back in the day - the spanking I got for doing that was so worth it!

      @@cajsheen2594 I think so too @cajsheen2594. I think that as they pretty much disappeared from bakers shelves as a cake staple, becoming more of a rare item to find, it could be that people identified them as a London treat given they were once so commonly found ❤

    I just had a thought, desicated coconut could be immersed in covonut milk to soften it. I remember when we lived in Singapore as a child buying 10 cents of coconut ground from a fresh coconut, it was delicious

    I remember back in the mid 60s, when I worked in Kingston-upon-Thames, going to the local bakers and buying one of these daily to go with my coffee - boy, they were absolutely amazing - as yours look Rik. Thankyou for posting this, wonderful memories. x

    Thank you so so much for making this. It means the world to me. Happy memories. In the early seventies as a kid, i used to do Penny for the Guy next to a bakers in Edmonton, London. As soon as I made enough money, I'd always get one of these. And if i made enough I'd get a slice of bread pudding too! Its crazy how one thing can make someone so happy!

    These used to be round and baked in foil cases when I worked in a bakery in 1970. That was in Brighton.

      Sounds more like a “Bakewell tart” being round 🤔 my mum who was from the east end, used to make these without the cherry, hers were often round and she called them “birds nests” to us kids.
      She passed away a couple of weeks ago at 94yo and I’m the only one in the family that knows how to make her Bakewell tarts & Birds nests.

    Oh this channel just gets better every day!!!! I absolutely love these, and you can't get them anywhere fresh - as in a proper bakery- not where I live anyway!!!! My dad used to bring these in once a week as a treat, I used to cut mine into sections and eke it out over the week 😅😅 These are a must make. Thanks Rik 🎉🎉

    Thank God, for ready made puff pastry. All these delicious little treats that wouldn't get made if you had to make the puff yourself. You're spot on about the coconut, but as you know, in the UK we'll be stuck with desiccated. I wonder if it could be rehydrated with some tinned coconut water, still wouldn't be as good as fresh, but probably better than desiccated. Cheers, Rik.

    I don't think I have seen those for about 70 years. When we were young that is what we called cheesecake. When I got older and people talked about the cheesecakes we know today I couldn't understand what they meant.

    Dessert + Homemade = automatically good no matter what it is. I've never heard of these, they look delicious. Raspberry (my favorite jam), with a fresh raspberry "cherry". My mind is racing on all the different flavors one might add to that icing. These are great, thank Rik.

    I'd not heard of a "London Cheesecake" - I really feel I've been missing out!! The closest from my childhood in Western Australia, was the delicious "Napoleon" slice, with a layer of short pastry, spread with red jam, then Frangipane sponge, then be-jammed short pastry again, topped with Pink Icing which had a red and a green piped diagonal stripe.
    Another family favourite was the "Dutch Cake" - nothing like the over-iced YT offerings, but a flakey pastry shell + a thin layer of plum jam, with a yummy spiced walnut cake mix inside, and pastry lattice on top and glazed with icing. Also DELISH!! Am so enjoying your channel, Rik, for both memories and ideas. Cheers! 🤩 RjB

    Hello Rik I've got a lot to catch up on, cor blige I remember these as a kid. In the fifties I had never heard of cheesecake as such this is the only cheesecake I knew of back then, maybe posh people did though, in those days😃👍🏼👍🏼👍🏼 these are amazing Rik.

    Wow amazing. I am going to try these. My favourite cake ever. When I was young the baker used to come to the door with an assortment of cakes in a huge basket. Cheesecakes were our first choice. Absolutely delicious. Unfortunately can’t buy them anymore. I did ask my local baker about 6 months ago to make some. They were not the same. In fact the base was not puff pastry and tasted greasy more like a croissant 😢 The frangipani was not nice and the pastry base was far too thin. They also toasted the coconut, uggh. Needless to say never asked them again. I am so pleased you have made these and only hope mine come out like yours. Thank you

    For a cheese-less cheesecake, that looks amazing! Before watching, I was trying to figure out where the cream cheese was (probably my NY bias, as we have world famous NY [Brooklyn, really] cheesecake here). I was wondering whether the topping was fresh coconut, extruded icing, or extruded cream cheese. (Coconut made more sense....but, still, where's the cheese?) Turns out, it doesnt need it. And your tidy version has to be the perfect iteration of this dish. To me, that is the absolute proper proportion of filling to puff pastry. I'd so love a bite of one right now! Well done, Rik!

    Ya know... for someone who claims not to be a baker... you certainly do a lot of outstanding bakery recipes! :) And super easy to boot. lol After seeing the comment I had to go back and watch the Bakewell tarts video. Not sure how these cheesecakes would be with the shortcrust pastry but would love to make the Bakewell tart version. Are those adorable little pans the 3" mini cake/pie/souffle pans? Shirley in NH

      Shirley, nip and have a look at this one - its shortcrust ua-cam.com/video/q1_IthUKjyw/v-deo.html I just knock out recipes that everyone can do - yes most of them are my way - that's just a couple of years cooking experience - I just cant see the fuss everybody tries to show in cooking - its far too complicated for folks to learn so I like to keep it simple - I don't hold with all the tosh beat one egg in at a time etc - I tell it as it is - chuck in some flour with the eggs and beat them, they will not curdle.     I used to love these Rik. Yours look the business. Something different. Spoon measures? I have teaspoons, dessert spoons, and tablespoons. When I watch videos the tablespoons always look like the smaller desert spoons, or is that a trick of the video?
