Making naturally leavened whole wheat bread using wild violet flowers

  • This video shows harvesting edible wild violet flowers in the spring to make a "wild yeast water". This water is used to make a starter sponge, and both sponge and remaining yeast water are then used to leaven a loaf of bread.
    No commercial yeast added.

    Wild Yeast Waters have made some of the finest breads I've baked as we like the long Sourdough like process which builds flavor, but don't like the sour taste.
