Instead of cut extruding blind and potentially guessing at the value, just create another 3 point plane on the vertex you want to cut to and just use that to extrude up to face.
You are right that is a cleaner way to do it. I have found that with some geometries, however, it can become unsolvable with STL files. So I wanted to share with everyone what the workaround is if it refuses to solve. Thank you for pointing out though that using the vertex as a reference is a cleaner technique.
