I think you should rethink and put the new floor in level, you can install ashlar walls to create eaves storage space and then you won't see the discrepancy because it will be hidden behind the ashlar walls. This will make the building of your internal walls much simpler If you're building off of a level floor. I Really enjoy the videos, keep up the great work 👍
I have worked on many old houses. Nothing is absolutely square, or level. Somethings you can correct, some just aren't worth it. You must often compromise. You do good work, Ilya (you remind me of myself as a younger man). I would try to "correct" the level a bit when you lay the subfloor/flooring. No-one will ever know except you (...and 108k of "us"!😆)
The structure is old and has character. Go with flow. Don't stress on perfection. You always do great work. You give it alot of thought and planning. 😊

It looked like Lady Mouse had built herself a palace! Warm and dry, high above the catspector, with private access via the chimney. Filled with bits of books for cushioning and also to provide reading material for those long winter nights spent reading stories to her children - a very smart mouse indeed!

I've been watching your UA-cam channel since day 1. Great Channel 👍. I personally don't know how I missed that u had 2 extra bedroom.
I am currently sitting on that very problem. The floor is a little more than 3cm higher than the opposite end of the room--4m away. As long as you don't put a desk on the high side it is not noticable. Unfortunately for me, it is the only place I can put my desk so, my son made the front legs of the desk longer. 😁

Install a level floor above the beams but leave beams exposed to form a cool feature.

If you plan to insulate the walls in the attic and the brick courses are invisible then making the floor real level wouldn't be to much of a problem. The height discrepancy in the eaves can be solved with small stud walls of equal height at both sides which have the bonus of storage space behind. One of these walls will be a bit closer to the ridge beam in the roof but this isn't visible.
But then level the floor at the top of the heavy oak cross beams which are in place now, don't mess around with these as they probably double as anchor beams keeping the front and rear wall of the house tied together.

Nice to see what you are doing for this old building, and to share in your design strategy. However, I have a complaint 🙂 It can be very difficult to hear your voice at normal volume level, but the music is at good level volume 👍
I don't think the level is THAT much of a problem. Yes, corner to corner over the whole length of the house its 8cm but once the space is been made back into rooms, it will only be a few cm per room

Using your laser level line to create a floor that will be even is the best plan. The wall height is easier to adjust , and will not be visible

I once lived in a house that was not level. It is a nightmare. Rethink your decision. That a wall looks wonkey (at an old house) is not as bad, as everything rolling around.

I have been doing something similar for years, on most occasions I would put a wall plate all around, making sure it is level, I have a jig for doing dovetails joints on the ends of the beams to tie in to the wall plates, but you do need a very powerful router, i.e. Mafell 65cs, with a very large dovetail bit, You might find it useful looking at a website, Arunda they make various different sizes of jigs, but if you are careful, you can make your own out of other MDF or plywood, which is what I’ve done had some aluminium plates made up to the patterns I made,

Well most older homes will not have straight (level) floors or true vertical walls and sometimes that will add a certain amount of character to a house. Wish I was there to help Illia. I know it's gonna be some heavy lifting coming up with those beams. Sorry the new trowels I sent did not work out...oh well. Bill
Eh, nobody is getting a wheelchair up the stairs to the second floor anyway, let alone the third. If you or a relative ever needs to use a chair or other walking device long term, the milk house might need more plumbing added, but is otherwise far more easily made accessible for that.
That said, I would still suggest changing your mind and putting the floors in at actual level. Those big beams are old, if they seem saggy from the rooms below them it won't actually look that wrong. And from above, it's unlikely anyone will notice a discrepancy between the ceiling and the floor brought about by properly level floors, especially once furniture is in place to disguise it... but their ankles and calves would actually notice a floor that far out of level, as would pens, drinking glasses, etc. It would be a subtle but consistent annoyance, so if you can build it right, you should.

should be plenty of diamond left in the core bit, you probably aren't getting enough weight behind it using it horizontally causing it to glaze over. Use it on a stone where you can run it vertically and put more pressure on it with some water to get thick slurry. If you can, use water inside as you use it, this will help it clear the metal as the bit wears as you go.

Could you make the wooden beam a feature of the ceiling, but not a structural part of the floor? You could lift it one layer of bricks, which would reduce the discrepancy by half.
In the UK old buildings are often fitted metal 'PATRESS PLATES' which are used as decorative features on the outside but tied to the I beams.
as others also tells go for a level floor is will save lot of time on the others. also normally the going to create storage on the roof corners so you will not see the difference on the end.

Were one side of the room the brick is one course higher than the other we call that a pig in the wall also differently put the floor as close as possible to level

Very prudent, responsible idea to get i-beams installed. This will help prevent future floor/ceiling issues!
That bit is called a core bit. It's for making smooth round holes through concrete or brick.

I think I'd work on the floors after they've been installed.
I would keep it level, building it out of level could cause unforeseen problems later on.

I used to work in building materials. The builders would fix a floor and then pour a layer of floor leveler and put a new material on top. The floor leveler was sandwiched between the old and new floors. It's a thin applied product. You may have more on one side of the house than the other, but it should fix the problem. 😊
Oh in your case the product would be between the ceiling and floor....

I would read instructions. I know it is applied on wooden substrates that have settled and I am sure it can be on solid concrete too. It just fills between and it's self leveling. Then it hardens and poof, you got a great flat floor.

No on the ceiling would make the house look too modern unless you plan to use it for another room and you make make it look like it was designed for back in the ages

Подумайте еще. Усреднить уровень не так сложно. При чистовой отделке можно придумать как скрыть это отклонение. Даже если это будет большое пространство - на такой длине будет вряд ли заметно, тем более, если не знать. А если по каждой стороне будет свое изолированное посещение, то воообще не стоит переживать
