Did NOT like Carm until they explained his work and reputation at the French Laundry. Bottom line he cares about quality, timing, function. I work at a mid level joint but between Carm- and Richie's short tenure at French Laundry, I can't help but to give perfection with customer service. Line cooks are a different breed; Some of the smartest most hard working people I've ever met.
Why are chefs and salaried managers always acting like cant afford labour. It's one the most expensive parts of a kitchen, but it takes money to make money. Stressing about it so openly only stresses your employees and makes them lose faith in you or the job. Invest in them.

Anyone who started screaming like that having a temper tantrum while on the job would have been immediately fired or beaten the hell up. Did you work at a restaurant run by pre schoolers or something?

So I was just referring to this clip in particular, and that's really the only thing in this clip that pertains to the restaurant (which people keep telling me so realistic) is this guy chewing everyone out. There maybe other things I think are unrealistic, but I'd have to watch the show or more clips to know for sure. But no restaurant employees I've ever worked with - chef or not - would put up with a guy acting like this. He would be immediately fired or beaten into a pulp. At least in my experience that's what would happen. These workers must be total bitches to put up with someone treating them like that. So maybe I just come from a place that has less bitches or something... I don't know. But it's just not realistic to me.
