Q 11TH ST. AT THE BEST PART OF THE BEST PART OF THE DAY IS AN OLD FASHIONED WAY TO IMPROVE YOUR LIFE AND FOR ALL THE BEST PART OF THE DAY AND FOR ALL THE FUN OF THE DAY YOU KNOW THE BEST PART OF THE DAY IS THE 111
I spent an hour of my life watching this and I have 0 regrets. In fact, I'm extremely pleased. So thank you so much for creating this and sharing the fantastic process that goes into these somen noodles. Which I now really want. Because watching food being made makes one hungry, or is that just me?
The work that goes in to this process is unreal. How did I get so absorbed in watching how noodles are made? We learn so much by watching how things are made in countries around the world. Very interesting video. Greetings from England 😊
...there's such much work involved that consume this should made one felt GULTY hehe....anyway i prefer to make it myself at home....AND BEST RESULTS INDEED....
I would never have thought I would enjoy watching noodles being made for an hour, but I did! Loved watching the whole process and all the ingenious machines. Thanks for sharing this!
I work for a large food company, all machines are that: made of clever usage of speed, angles, bruches or cuting parts. Some processes are fast, over very slow. I love that.
any kind of process of making something, like any processing at all, is just mesmerising, you can watch this stuff for hours because its both incredibly fascinating and extremely satisfying to see the results of all the work someone does.
I will NEVER look at a packet of noodles the same way again. I love how almost all of the machinery in that factory is on wheels (so basically everything's modular and can be taken in or out depending on where they are in the process). And the different noodle-stretching machines! They absolutely astound me. Someone had to think carefully about each step in the process, how far the noodles needed to be stretched and what motion could do it without breaking them. Thank you so much for sharing this video, and thanks to the company that allowed us an inside look!
Great video, kudos to the film maker, kept it interesting, great panning, no jerkiness, and of course all the production people involved. Enjoyed the whole process. Very labor intensive! And, no irritating music. Thanks.
Your hard work is seen here, so glad you allowed us to view this process. There is so much care taken to make sure your customers are satisfied. The machinery is dangerous to work around. I'm glad everyone stayed safe!
When watching this video, I was amazed at the time it took with modern day machinery, it made me keep thinking about how long it must have taken 100 years ago. I know this process was in a factory to make up 1,000’s of bundles in those 2 days, but still the process to make 1 bundle or a 1,000 still is the same. Today’s noodles were all perfect in length and thickness. Imagine 100 years ago, kneading the dough by hand, age it, knead the aged dough into desired size and thickness, several times, aging in between, once that’s done, then the noodles need to be stretched several times to desired length and thickness, drying them, stretch and dry again and finally after 2 days, you can finally eat your wonderful hand made Somen noodles. Amazing dedication to their craft.
Thank you for your comment. I was surprised that you were very familiar with this noodle. I am very honored to be able to show you a video of their devoted work.

Thank you for sharing this. It's really amazing how the technology took place of the long and hard manual labor. Even the manual making of those noodles will always be marvelous, the machinery involved is amazing also
My grandmother ( from the coastal area of Zhejiang, China) also made these noodles, in basically the same process, and they were made by hand . It is pronounced "su mian" in the dialect. Absolutely fancinating thank you so much putting the effort into producing such a high quality product. It's beautiful watching the harmony that exists between the people (family?) as they work at something with a long tradition. I did enjoy watching this! D💜
I am AMAZED at what goes into making the "summer" noodles...Wish I could have been there watching them make this from start to finish. At least when I DO get over there, I'll make sure to eat enough of them in the Summer.
I guess I never really considered the production (professional) of noodles... There were many interesting uses of what appeared to be custom built machines and processes. I hope they are able to package off the trimmings, and find a market for them. And that the employees are welcome to the "irregular" pieces that wouldn't be the final product(s), those are often just as good, and still edible, it would be a nice perk for working there... Thank you for allowing us to see this more traditional production of noodles
I would like to congratulate the makers of this wonderful documentary. Excellent in every way. I am a 84 year old sansei in California ever learning about the world on the internet.
This was insane! Respect. I strongly believe that this whole process has been designed by Leonardo himself. No offence meant but safety wise, there are so many questionable things here: pullies, belts, chains, turning wheels, and all them with no cover/protection whatsoever: very tricky and difficult to imagine what happens if something goes wrong. The level of hazards here is "red". Hygiene wise too there are some questions: all these machines are painted, with oil leaking from all over the place: no stainless steel anywhere. I am not sure why. Anyway: these people and the ones who designed these machines: respect.
I told myself in the USA this process would be shut down due to lack of.... what ever. and this whole age old process would be lost. So amazing to watch! Thank you FOOD*STAR for this very interesting video!
I really disagree with all those comments. The workers are experts and understand the machines very well. Sure, all this could be made more compatible with 'western' sensibilities but so much tradition would be lost. I bet the noodles wouldn't taste as good either.
Wow, what a lot of hard work went into making those delicious looking noodles! I am curious as to what happens to all of those broken pieces that are left over from the process?
In the video it showed them grinding the left over pieces up into an almost flour like consistency into paper bags and then the bags it was in was taken into the area where the video first started, to be reused in the next batch of dough they make up.
Nowadays we see Japanese-noodle-ALIKE everywhere all over the world, but they are nothing like real Japanese noodles - totally different texture. Once you experience real ones, you know others are just quickly-made-gimmick noodles! I am one of lucky ones who had a pleasure experience in Japan.

¡Disfruté la elaboración de principio a fin...! ¡Excelente...!
gracias por tu comentario✨
How fascinating it is to see these noodles be produced! Thanks for sharing this video.
Thank you for your very nice comment🤩 I will do my best to post videos that you like.
This video was so much fun to watch. Thank you for posting it.
🥰🥰🥰
100% total respect for people who make noodles 👍👏✌️❤️🙏
Thank you for your comment🤩
I am AMAZED at what goes into making the "summer" noodles...Wish I could have been there watching them make this from start to finish. At least when I DO get over there, I'll make sure to eat enough of them in the Summer.
🥰🥰🥰
I guess I never really considered the production (professional) of noodles... There were many interesting uses of what appeared to be custom built machines and processes. I hope they are able to package off the trimmings, and find a market for them. And that the employees are welcome to the "irregular" pieces that wouldn't be the final product(s), those are often just as good, and still edible, it would be a nice perk for working there...
Thank you for allowing us to see this more traditional production of noodles
🤩🤩🤩
I liked so much the processesing of noodles..all are well-done
I would like to congratulate the makers of this wonderful documentary. Excellent in every way. I am a 84 year old sansei in California ever learning about the world on the internet.
Thank you for your comment🥰🥰🥰
This was insane! Respect. I strongly believe that this whole process has been designed by Leonardo himself. No offence meant but safety wise, there are so many questionable things here: pullies, belts, chains, turning wheels, and all them with no cover/protection whatsoever: very tricky and difficult to imagine what happens if something goes wrong. The level of hazards here is "red". Hygiene wise too there are some questions: all these machines are painted, with oil leaking from all over the place: no stainless steel anywhere. I am not sure why. Anyway: these people and the ones who designed these machines: respect.
Thank you for your comment.
I bet the noodles wouldn't taste as good either.
omg !! mad respect for the noodles i love soo much ,thanks for sharing this happy new years japan and the world
it's a beautiful process. I am glad I took my time to watch it.
🤩🤩🤩
i have to buy some of those! the care they put into making them was so impressive.
🥰🥰🥰
Even in first 30 minutes I was amazed by how much work they got done in 8 hours
Thank you for your comment.
Wow, what a lot of hard work went into making those delicious looking noodles!
I am curious as to what happens to all of those broken pieces that are left over from the process?
Thank you for your comment.
Debris seems to be discarded or shattered and reused.

Thank you for your comment.
