    Just in time for Christmas, I attempt to make a Candy Cane from scratch!
    After my failures at making candy corn, I take another stab at making a candy cane, starting from sugarcane. For flavoring I use cinnamon I harvested in Mexico, and mint and wintergreen I grew and foraged plus distilled alcohol to extract the flavoring.

    You should add the flavoring and coloring when the candy is incredibly hot, as it'll mostly boil out the excess liquid and won't change the consistency of your candy by adding extra liquid to it.

      Marce Z that’s why his red was much stickier. The excess water in the red food coloring caused the sugar to become sticky.

    You have to put in the extracts at the start when its molten, stir it very fast so all the alcohol and water boils out and doesnt make it sticky or soft, also add the color at the start too then just stir it around to even the temperature

    The colors actually remind me of the time that my parents, sisters, and I made cookies out of red and white dough. I'd honestly forgotten about it until I saw the candycanes themselves, as we did it around six or seven years ago.

    As some others may have mentioned, the reason why the candy didn't set as hard crack is that there was too much water left over in the candy from when you added both the coloring and flavoring. You ideally want to add these when the candy is still hot enough to boil out all the water from the coloring and flavoring. If you check out the channel Lofty Pursuits, Greg goes over this is many of his videos.

    I never realized how difficult and labor-intensive candy-making can be! There's just as much toughness, determination, grit, and raw muscle power required by candy-makers as for mining iron or copper. Fascinating! And thanks for another wonderful video! :)

    I think the reason it never quite hardened was because you added the extracts at the wrong stage. Adding them prior to pouring and boiling the extracts with the sugar might’ve removed any excess liquids in them. Either that or the sugar never quite reached the ‘hard crack’ phase temperature-wise.

      Gummy Bugz true, it definitely would’ve been a challenge to manage all the different flavors and sugars at once, especially since this is his first time doing hard candy. But I think it’s a handy tip to have in the event he ever decides to give it another go. Hopefully, if he does ever try it again, he’ll be a tad less ambitious and just shoot for one flavor extract for both colors to ease the process.

      slimkt if you watch the pros like the folks at Lofty Pursuits they do batches by flavor - make all the base 'white' sugar at once, then separate it and dye it right away while it's still hot so the water in the dye boils out. You don't need four different pots.

      djcfrompt actually, I’m subscribed to Lofty Pursuits. And yeah, they mete it all out from one big slab, but they have special candy-making equipment like a cooling table with metal bars to separate them and a warming table to keep them malleable. This guy has a stove and limited counter space under some heat lamps (on top of just not being a professional candy maker,) so it would make sense that he’d produce his candy canes differently. However, I do agree, in that I think it’d be wise if he were making several different flavors, that he just make one flavor batch and then move onto the next, rather than trying to do all of them at once. It’d probably be a little tedious, but the end result would be better.

    Normally the flavouring is added when the sugar is cooking or with the colouring, as if the water in it is not properly evaporated out the candy can be soft and sticky like yours. An absolutely great job though! You are incredible.

    Some of the candy makers I’ve seen add the flavor while still in the hot form so the residual heat in the candy can boil off extra moisture.

    In real life I'm a chef and you should have added the extracts right when you took the sugar off the heat, also your wanted to get to the hard crack stage in temperature which is about is in a range of about 3 degrees f so I don't believe you were quite there also I do not believe your sugar to other ingredients was right, it should be mostly sugar but beside this you had a great first attempt

      I think the only issue with the candy canes was that you added the flavours too late. In the videos of lofty pursuits you can see them adding the dye pretty early, so the liquid boils off

      How To Make Everything what you could do is have two different pots of sugar syrup, add the extracts midway in the boiling phase to allow some of the alcohol to burn off and get a harder result

    Thank you sooo much... I've been craving Candy canes for a while... and watching videos and I was just about to make them... and you just convinced me to just go to the Dollar store and pick up a box. True they will be made from refined sugars but they are 10 for $1 and I won't eat more than one a day and I'll eat my fruits and veggies. I promise. And I won't have to fail...thanks again.

    Have you checked out the channel Lofty Pursuits? Its a candy making channel and they show all of the right equipment. You had everything but this special table to keep the candy at just the right temperature before molding it into what you want.

    hey andy, it looks like during your distillation you have the water flowing incorrectly, you should make sure you have the water flowing from the bottom part of the condensation tube to the top, that way it fills the condenser all the way and makes for a more effective distillation and helps to prevent your condenser from cracking due to uneven heating. Just want to give you a little tip because this channel is awesome!

      Thanks for the tip! The water pump I bought was a bit too weak, so it only worked flowing that direction unfortunately. I picked up a better one so hopefully I can run it the proper way now.

    Next time add the color while the candy is still hot to boil the water out o f the colorant. The extra water in the candy could have changed the sugars enough to make it set soft.

      Yes, but there would be a view difference. Spending a bunch of money to recreate something people have already seen done polished just will not be worth it. Especially with how tight money seemed to be for them a couple months back.

    I'm also from Minnesota, but my dad's cousin, Virgil, grew sugar cane down in Texas. We would go out into the field and he would cut us off a drippy, runny stalk of cane for us to gnaw on all day. On the way back to the ranch, we passed a roadside slough where a flock of Flamingos were grazing. He pulled over and said "watch this", as he reached under his car seat and produced a firearm, which he proceeded to fire in the air out his car window to set the birds to flight. Yeah. Texas!

    I see why thy are soft. You should mix the flavoring in when it is liquid so there is no water in it. Water will make it sticky and soft. Also a hack to let you work with it longer is working with it on a warm/hot surface, as it will not let it cool as fast. And candy makers are not buff, it is semi easy to pull when it still really hot, but we wear themal gloves. Hope this helps!!

    I know this is late but on the lofty pursuits channel they make candy btw, they talk about how the water in coloring and extracts for flavor make them stickier and more like Taffy. :)

    I remember mom making taffy for us. She would make sure we slathered butter on our hands to keep the hot candy from burning our fingers while we pulled it. 😂 ❤️

    Dude You nailed it. But did not think about the moisture you were adding with the flavors. Checkout Lofty Pursuits youtube channel they do hard candy and their videos are awesome for learning technique for when and why what flavors to add. If your near them you might even be able drop in and get a few first had pointers.

    From what I have learned, you add the extract when it is boiled and the coloring when you first pour it out to boil out the extra water from the extract and coloring.
    Edit: You should check out Lofty Pursuits' channel, they could show you how it is done.

    I may not be a scientist but the flow of cold water in the condensation tube is the other way around , ur yield is increase if it is correct

      You're probably right, I bought a water pump that was way too weak, so it only works if it's flowing down the tube. I bought a better one right after this, after seeing how much alcohol was escaping as a vapor still at the end of the tube.

    I think the issue was that the flavoring needed to be added when the candy was almost finished boiling. Then, the flavor is incorporated and the alcohol can boil off.

    14:30 this is why candy makers have metal hooks that they use to pull the candy, using the candy's weight and gravity to do the work for them. The flavor extracts should be added at the end of the cooking process before it comes off the heat. By adding it during the pulling process, you cooled the sugar too rapidly and changed the formation of the crystals.
