Before I got married and left New Orleans I made sure I could cook my Aunt’s gumbo. She used chicken, andouille sausage, shrimp and blue crab. I can’t get the blue crab or any decent shrimp where I live so I just do the chicken and sausage. But it’s just as yummy. I also switched a few years ago to making roux in the oven. Just as good but it never burns. With small children it was a life saver! Great video!!!
That looks amazing! Here in New Orleans we cook our rue until it’s dark then we add chicken broth and sausage and chicken or seafood gumbo with shrimp and crabs it’s so good I wish I had a bowl of yours! God bless you!
Karen, I just found your channel, loving it! I am from the Deep South but relocated to be near my kids when I lost my husband. I really miss all the wonderful foods grown and available there. Very well explained and looked delicious! My sister has lived in southern Louisiana for a few decades and she taught me how to make chicken sausage gumbo. It’s been so long since a cooked any, I don’t remember the process so much as I remember serving it over rice and topping it with warm creamy potato salad (with mustard, mayonnaise and dill pickles). Oh man. I’ve got to give her a call and get that recipe again. She has some dementia so hope she remembers.
I find green peppers a little bitter....I never buy them , I usually get red, orange, or yellow....green would be my last choice if that was all they had....Nice seeing your Son cooking for you today....Chicken Sausage is good also....much better than so much beef..... Yum Chris's Gumbo looked wonderful....I could almost smell it.....of course, I have Ribs in the oven low for 4 hrs. too so it smells good in here too....

I grew up loving to eat green bell pepper, the way folks ate apples. I can not eat the green now, but I love the red , orange and yellow. I made Goulash yesterday and used orange pepper in it and it held up well.

Great job and very well explained. I’m with you about the roux being the very most important part of the recipe. I’ve found out the hard way it goes from great to start over really fast. I do like your technique of cooking the onions and peppers in the roux rather than the sausage grease. Gonna try that for sure.
We just had left over Gumbo that I had in the freezer for probably a month,..and it was better the second time! All I had to cook was rice and potato salad.❤️

Karen I actually love Garlic sooo much that I roast the whole bulb'. slice off the bottom (Roots where it exposes the cloves, drizzile with olive oil and salt lightly, pop it in the oven till its brown.. then pop em in your mouth. I told my husband I'm busy watching a video...he came in and said ohhh...keep watching...Dinner tomorrow..
I make gumbo all the time. I make a huge pot, and my husband and son eats it all within two days. I'm lucky to get a bite. I would suggest to your son not to put the okra in until the last 20 minutes of cooking to prevent it from disintegrating. One of my secret ingredients for more depth of flavor is one to two tablespoons of bacon grease.
Grace, he is an amazing cook. Both my sons are great cooks. The other son is more about outdoor cooking. I have not used gumbo seasoning but I confess, I have never made gumbo. By gumbo seasoning I’m thinking maybe you are talking about file. That is a traditional Louisiana flavoring made from sassafras. I’m gonna say it maybe an acquired taste but I personally like it. I would encourage you to try it, you never know. It can be found in some southern big chain stores like Kroger or Publix. Usually I find it at some seafood restaurants that sell crab or oysters.
This looks yummy. Can either one of you make dirty rice??? I love mine with chicken liver added to the ground beef and smoked sausage but I don’t really have a good recipe. Still struggling to find this recipe. Twas my grandfather’s . Some of your recipes I’d love to try it’s just in northern Canada. The price of food would make you sick…. A pound of butter is 15. About 11 dollars American. 2 L of milk is 15. A loaf of bread about $10.. etc.. if we didn’t eat wild game, we wouldn’t eat at all, lol.

Being a Cajun from south Louisiana, this is more of a creole gumbo. A Cajun gumbo never adds tomatoes, unless you add the prepared mixture we cook and freeze in quart freezer bags pressed flat for easy quick okra gumbo, which has tomatoes cooked down with okra, onion, bell peppers and seasonings for a very long time . I have short cut for roux which has little fat so no constant skimming. Traditional gumbo is chicken and sausage here. My favorite is okra gumbo. Our roux is a whole lot darker😁. I will send my version of Cajun Gumbo recipe and the okra mixture recipe to you, Karen. Need your email address😍🥰😋😘
You sure put a lot of stuff in your gumbo. Mine is like the LA School of Cooking. I make andouille sausage and chicken gumbo. Roux (about an hour to make) cajun seasoning. Salt & pepper, fresh garlic 4 cups onion, 2 cups each of green bell pepper & celery. Chicken stock, I use chicken thighs because the meat is moist. I don't use okra nor tomatoes. Those are used more in creole gumbo an not cajun gumbo. Instead of rice I at times like to put a scoop of potato salad in the gumbo. You see that a lot in Cajun country. File powder as a condiment. It can over power and ruin the gumbo so it's not added.
I’m the opposite. We have many rescue cats. One of my elderly cats is sleeping in my big cast iron skillet. I need to wash and oil it but don’t have the heart. Gotta get him a little bed but he’s always been odd about his sleeping places.
