Meat is my favorite thing to can in my pressure canner! Chicken was the first thing I ever pressure canned. It makes the best chicken salad.
I have canned chicken thighs and legs bone-in skin-on. It makes a richer broth for soup.

For Chicken, yes, because of the moisture in it . 💜
I have good results with beef but pork and chicken always seem very dry and over cooked. Is adding a little more fat a potential fix?
You can use chicken Thighs instead of breast's for juicier chicken. For Pork I use Country Style Ribs or Pork Shoulder, cut up. The fat Cooks off and you have nice tender meat. 💜🌺
