How to make Cream of Mushroom Soup

Ingredients:
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 lb. white bottom mushrooms, diced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 6 cups vegetable broth
- 1 cup cream
Instructions:
1. In a pot over medium heat warm the olive oil and butter together.
2. Stir in the diced onion and garlic cloves and mix until combined.
3. Stir in the diced mushrooms and season with salt and pepper to taste, dry oregano, dry thyme, and cook for about 5-10 minutes.
4. Pour in the vegetable broth and cook for about 20 minutes.
5. Finally, puree everything with a hand blender and stir in the cream.
