麻油基本分兩種...清麻油顏色淺香味淡適合高溫類烹調...黑麻油顏色深香味重適合湯類等低溫烹調...當然也有介於之間的調和油...如果用深度烘培過的黑麻油高溫炒菜就比較容易變苦...
現在很多清麻油都是調和油

大陆这边还有那种用小石磨磨出来芝麻糊糊,然后用干葫芦轻轻摇动,最后香油浮在上面,芝麻糊沉下去。香油舀出来装瓶,底下芝麻糊结块也被人吃掉。
台湾也有这种工法,不过是用机器磨成芝麻糊,然后放入大锅中,大锅会左右轻轻晃动,香油会浮在最上层,之后收集装瓶,我有亲自去工厂参观过

芝麻粉還是很香的啊!芝麻湯圓裡面不是有粉跟糖,還有芝麻糊跟包子也可以用上。
如果買過芝麻粉就會發現有一種粉不太香,那種的也比較乾,有時買到的會比較香,我看就是有些粉是被壓過油的。
這個壓完的芝麻圓餅會像石頭一樣硬,很香!
但不會吃(太硬),一般都放在樹下當肥料每天澆水會自己慢慢的溶化!
煎蛋前為什麼要加薑片?
多一個薑味而已不用想太多
進補用,傳統應該煎鴨蛋,我兒時吃這種麻油蛋,長輩不會給我吃雞蛋,都是鴨蛋,鴨蛋蛋黃更油,味道更醇厚,雞蛋蛋黃就沒啥味

台灣有進補的習慣,吃黑麻油通常為了補身體,韓國的芝麻油應是白芝麻
卖香油的亲爹都吃不到纯香油

台南就很多了,可以找農民買!
像我們家自己種,收成後再麻煩認識的代工後回來自己填充自己賣(品質保證)
