  • Today I make some awesome meals to show you what I normally eat in a day! The goal of these videos is to help give you ideas of different plant based meals you can make and eat at home yourself.
    Today's video starts at the gym with Crystal and I ripping through a workout. Then I head home and show you my breakfast, lunch and dinner. We split up the day with an awesome hike where the weather sort of turns on us. I hope you enjoy watching.

      Sonja reminds me of my niece Elle here in the UK. I wish for the pair of you great Happiness love and harmony. I'm in my 50s and disabled life can throw some unexpected curve balls your way. However like the lady says ... Respect for one another is key. Love Peace and Harmony xxXxx Debz from Scotland... Ps I'm sure going to try that ... What's is called .. punch bowl? Pick bowl?     Derek! Not sure if anyone else mentioned this, but if you haven’t already, try replacing the silicone ring of your InstantPot lid before you replace it! We had a similar issue a while back and a new ring did the trick for us. Good luck and thanks for all of your great content and all those amazing nature views! 😊

    I am one of those people to whom cilantro tastes like soap. But I've learned that pairing cilantro with some lemon juice changes the flavour nicely to the herby goodness it should be.

    Your next cookbook should be called "Mmm, Wow, So Good!" With an outline picture of your hand holding a fork and pointing at a bowl. Every time you try your food, my wife and I say together "mmm, wow, so good" and make the same pointing motion because you usually do it after you try your food haha we look forward to it each cooking video 😊

    I've been watching Derek for several years now, and the most incredible thing that he does is somehow put about 3 pounds worth of food into his blender with about 1/2 cup of water and it somehow blends perfectly. If I tried to do that I'm pretty sure my blender would catch on fire instantly. Truly amazing.

      Haha so true bro! I love those smooties. I never would of thought of freezing bananas before 😂... I understand why he always makes them so often. Without Derek, I would be so lost eating plant-based. And I try my best to do oil-free. Thank you Derek!!! Honestly, I only like kale in my smoothies, but am willing to try a few more options 😬.

    Another fine video. Smoothie suggestion: try adding some amla powder (powdered Indian gooseberries) - *extremely* high in antioxidants. My regular breakfast is a chia-seed pudding, and I include a teaspoon of amla powder in that, along with 1/2 tsp of ground cloves, another antioxidant powerhouse - and 2 Tbsp dried barberries, an excellent source of antioxidants. I do grind the chia seed (about 2 1/2 Tbsp) and also grind a tablespoon of flaxseed for the pudding. I include 1/4 cup old-fashioned rolled oats (not cooked) and a teaspoon of cinnamon and a teaspoon of dried marjoram, both excellent for antioxidants. I add a cup of frozen mixed berries, about 1/3 cup chopped walnuts, and then enough oat milk to mix it well. I leave it overnight in the fridge. - And I'm so happy to see you using an intact whole grain (brown rice rather than white rice). The bran is not just fiber, it's high in minerals and vitamins. Hope to see other intact whole grain being used (rye, farro, Kamut®, emmer, red fife wheat, winter wheat, et al.).

    You don’t necessarily need to replace your Instant Pot. You should try replacing the gaskets first. It’s fairly cheap to buy new ones

    Another great video. When you get around to replacing your Instant Pot, I hope you get one that has a yogurt button/dial with ferment setting. That way you can make absolutely fabulous cashew yogurt. It's super simple to do and frankly, my homemade cashew yogurt that I make in mine is the only plant based yogurt I think is edible 🙂. To make 2 cups of cashew yogurt, you just blend 1 cup cashews with 1 cup water and a pinch of salt until smooth and creamy. Then, you add 1 Tablespoon yogurt (I buy a big tub of plant based yogurt and then scoop out the yogurt in 1 Tablespoon measures and freeze them in an ice cube tray....thaw in the fridge before using.) and stir it in well. Pour into a pint sized Mason jar. Place the jar into the pot (do NOT add water to the pot.). Hit the Yogurt setting, then Ferment on High setting for 14 hours. Place a glass lid on the top and let it do its thing. When the 14 hours is up, place the jar in the fridge to chill and voila! (You can use yogurt starter in place of the yogurt that you add to the cashew cream, but it's expensive and harder to find.)

      Nice! Ours does have that option but I don't think I've ever used it. Thanks for the recipe I will definitely come back to this. I agree, there aren't many plant based yogurts that I've found I really enjoy. The Yoggu one is so good but very pricey.

      Derek you always amaze me with your workouts and sharing your favorite recipes. I just told my wife im going all in with this plant based lifestyle! I’m ready to start. I just bought tofu ! Lot’s of salad. I threw away my ranch. I got spicy mustard. And honey mustard! I’m trying to get rid of my. Eggs. I bought morning star burgers!

      @@lvdmerwesince making yogurt doesn’t require pressure cooking, you can just use a skillet or glass lid BUT it must fit the Instant Pot so that the temperature inside during the fermentation stays the same. If you don’t have a lid that fits the pot, you can use the Instant Pot lid. Just put it on the pot per usual. I hope that my explanation makes sense.

    Very inspiring! Such an amazing hike and a majestic view!! Madrone trees are how I was introduced to them since living here in Southern Oregon! I think they're uniquely beautifull!     Great video. All the food looks so good. I like to make a sushi dowl with rice, avocado, cucumber and tomato. Put some brag soy sauce last rice seasoning. So good fast and easy to make.

    Hi Derek and Crystal! I just wanted to let you know that you can buy a new seal for your Instantpot. Someone had told me that they will need replacing after a while, so I ordered an extra one when I bought the appliance.

      Agreed - probably good to replace the plastic seal ring about once a year, depending on use. I replace mine when I notice it's not coming up to pressure as efficiently as it should. No need to buy a new appliance, which is great 😊

    It's my new years resolution every year to learn to eat something I don't really like. There are SO many things that I couldn't stand eating before, but that I now learned to LOVE. Cilantro, celery, smoked paprika powder, tofu. I've never been a picky eater, but now, as soon as there is something my taste buds don't like I take it on as a challenge 😂 Still working on liquorice though, it's a tough one.
    Trying and re-trying things in the kitchen has really developed my cooking skills, I always recommend it!

    Love the smoothie but I noticed it struggled to blend for a second which I used to deal with all the time too. I started loading up the blender based on what vitamix recommends and it has been blending so much easier! Start with your liquid, then powders, then greens, then fruit and frozen items at the end. Loading it with heaviest items on top will push everything down and allow it to blend really easily. Hope this helps!

    I'm not sure if you meant you were needing a new machine, or already knew about the seal replacement but I figured I'd mention it just in case...

    I'm having the same problem with my Instant Pot. The steam setting leaks all the water out. It was the one I use to use the most. I can still steam my veggies by using a different setting like the soup/broth & adjusting the time as needed. Initially I used it only for cooking beans but now use it also to steam veggies, make broth from scraps & occasionally a one pot meal.

      Try getting a new seal ring for the inside of the lid. That should fix your problem!

    I LOOOOVE your video so freaking much Derrick! (sorry if I misspelled your name)! Seriously! I am the sameee about the coconut milk, I buy it in the can and then pop it in the fridge. Its so nice because it separates my cream from the oil. Then its nice and thick for me! The oil separates for me and leaves the fat at the top :) Have an awesome week!

    Instant pot tip: order new seal! Ours was the same. We thought it was going bad, but learned that we needed to replace the seal in the lid. It works like new now!👍❤️😘Love watching your videos.

    I think the only thing you should need to make it seal up again is to replace the sealing ring?
    Save some money.
    I've got 3 seals, because the smells of different foods sticks to it, and I don't want everything to always have a hint of chili stew. 😊

      I remember in high school they made us all taste this weird paper strip thing that had some chemical on it that defined what type of taste buds we had. Then split us in to groups and asked us if we liked certain foods and it was really accurate. I remember cilantro being one of them and I didn't even know what it tasted like back then so had no answer, but I'm sure other people in my group said they liked it. Thanks for the kind comment!

    Looks so yummy! My hubby loves chickpeas so I'll try making the Canadian fusion Thai curry for him. I'll use my sunflower seed cream instead of the creamed coconut to avoid the high saturated fat and sugars, to reduce his risk for another heart attack. Great work as always, Derek and Crystal! You are breath of fresh air (so positive)!

      I also like using blended squash seeds (scooped out from squashes I've bought previously) in sauces instead of coconut or cashews, since they are so much cheaper.

    By definition what makes sushi sushi is not fish, not Seaweed but the rice. Specifically short grain rice cooked with Japanese cooking wine (and water obviously) or you could add sugar to rice vinegar instead

    Today I learned you can freeze ginger and it can still be a-ok when you need it. (Thanks!) Would love some more tips like that- ways to save the veggies/fruits that might go bad if you don't use them. I know you're fantastic with just using what you have to whip something healthy up, but if you ever just dont' get to something- what should we do! Or maybe more recipes of throwing things together. Essentially, just keep making videos forever and I'll always watch them.

    Great recipes as usual. Does anyone else have trouble drinking that much smoothie? I usually feel pretty bloated and don't want to eat for many hours.

    Have you tried to replace your sealing ring on your IP? The issue with sealing might be that the ring needs to be cleaned better/replaced. That is a lot cheaper than a new Instant Pot!

    Does your Instant Pot maybe just need a new sealing ring? I believe the manual says to replace that about every six months or so. It would be nice to not have to replace the whole pot!

    Always great to get meal inspiration although my dishes look pretty similar as well :) and finally someone who also adds parsley to a smoothie. Most people always add cilantro, which ruins every food for me. 🤮 I started with calisthenics exercises at home everyday and also strengthen my core, holy shit those exercises aren't easy, muscles definitely burning, lol. Always underestimated how effective calisthenics can be.

      Way to go with the calisthenics! I know, they are the best. I've gotta get back into doing more of it. I get lazy at the gym and use the machines, it's just so easy! I like both cilantro and parsley, sometimes both, but parsley definitely adds less of a taste.

    That bowl looks amazing!! Have you tried replacing the silicone rings on your instant pot? I bought a set off Amazon and now mine seals like it did when it was new.

      I could try. I think we did once. It's the actual vents that leak the air. I tried taking them apart and cleaning but it didn't do much. Around the top of the body is all rusted too, I hate replacing things that can be fixed but there are a few issues with it.

    I just bought morning star burgers.and tofu. I just told my im going all in plant based eating! I had oatmeal with blueberries and a banana.cinnamon. With a smoothie.with blueberries and blackberries . And a banana.. for lunch I made a half sandwich with tofu
