    Sir Gloco tips po:
    When you do the "John Wick style of killing" (Ikejime), you must locate the soft part of the head where the skull and the body met (technically "Batok"). Aim the knife or something pointed in a 45-60° of angle. It was a direct hit to the brain.
    And for the Lemon juice, add it after you do the cleaning of the fillet, it will add the extra juice for the meat. And also don't grill it too much, it can cause the dryness of the meat. In case of dryness make a sawsawan na Toyo-mansi na may bawang at sibuyas!

    I just chop it all from head to tail and make adobo sauce with lemon juice and zest and lots of chilli... Then simmered it all... Napakasarap grabe!

    You don't usually Fillet a catfish :D It was more good to remove the innards first then rub whatever you like then Grill it whole.

    sir, dapat sinimulan sa unang hiniwaan mo, gamit ung fillet knife na hawak mo. paghiwa mo dun sa side isagad mo hanggang buto tapos dahan dahan mong ihiwa para hindi masira yung fillet :)
    dapat hindi mo nadin tinanggal yung skin, iluto mo lang sya skin side up for 3mins max (if i'm not mistaken) para crispy skin.
    medyo sumobra yung paprika.

    My grandma and grandpa used to use "Palo palo" (yes the one use in laundry here in the Philippines)
    to kill the cat fish or just knock it out.
    There are 2 main best ingredients in catfish.
    If it's in season and if ur lucky,
    You can get sago like eggs.
    And the second one is the instestine. Its very tasty and full of umami.

    tips
    before butrchering you should have first drain its blood removed the innards afterwards when you butcher the fish remove the tail or don't cut the whole fish add only salt and pepper no exception then grill it

    Kung filleting din lang....
    1:Start near gill side....
    2:cut meat near gill....
    3:start cut from top, near the head, and continue until reaching tail....
    4:make sure that you hit the bone inside as you make the cut...
    5:continue the cut to the belly until you reach the tail...

    CATFISH PREPARATION:
    Catfish kasi kuya gloco is a delicate fish, breading and shallow frying it is actually rly nice tapos if medyo near na sya maluto put butter on it and lemon you can also add dill it smells kinda citrus-y tapos yung breading use spiced flour(paprika,cayenne pepper, garlic powder) tapos dip it in the flour and then egg and flour again. Or you can just grill it whole just take the guts out and score the sides tapos u can just take the skin off when ur eating na. 😊😊😊

    Try to cut the gills po kapag ibbleed out mo yung fish, best is to aim or to make a cut on both pair of gills. Best way po yun to keep most of the blood flushed out of the fish. 😊

    Hahaha Lodi, I'm not an expert in terms of preparing this kind of fish. But that fish is a tough one, my ma and pa would often put a salt on it. It'll eventually die after about 10 to 15 minutes, it's best grilled or ginataan if you know it,and uh the head you don't have to remove it. Neither cut it's meat
