      The coconut flour was in the bowl with the almond flour and I forgot to verbally say it in the video. (Which is why I usually never do that! LOL) Good catch! But yes, it was in the recipe. 👍🏻😊

      Yeah, I did that... that’s where I saw coconut flour listed, but he doesn’t mention it when adding in the ingredients. He’s not given the recipes, he chooses them from people’s blogs, then prints out the info.

    When you said "tastes like graham crackers" A light bulb went off. Crush the cereal and use it for cheese cake crust.Without the cinnamon. I miss that.

      I was thinking the same thing! No need to ditch the first recipe if it tastes like graham crackers! Think of all the other things you could do with graham crackers... hmmm...are there any low carb marshmallows and chocolate bars out there?

      @@Beezer.D.B. on the matter of chocolate bars, definitely yes. as for marshmallows, I haven't found any, but you can certainly _make_ them, as present day marshmallows are just gelatin, corn syrup, and sugar and no longer actually contain the ingredient that gave them their name in the first place. You'd just have to replace the sugar with a low carb sweetener, and then use a sugar-free syrup of some kind. Probably best to make a simple syrup from the same sweetener, tbh.

    I'm an avid gingerbread house maker, so I thought I'd share a quick tip: If you don't have an unrimmed cookie sheet, flip your regular sheet pan upside down and just slide the parchment straight onto the bottom. No lip to navigate! I'm not a big cereal fan, but this definitely sets the wheels turning on what other uses this might have. Thanks for the taste test!

    In my experience, with a crumble dough the easy way to roll it out is to pour the crumb dough over a piece of parchment on a half sheet pan, without gathering it into a ball, then cover with a second parchment paper and set a second half sheet pan on top. Lean into that second sheet pan to compress all the crumbs into a nice, flat cracker mass. It’s important to use cheap half sheet pans than don’t have a nice rolled edge. They tend to stand proud when nested so it’s harder to use them to compress dough for you.

    I'm not a huge cinnamon fan so I substituted COCOA POWDER for the cinnamon- Oh My can we say cocoa puffs! Nice flavor and held up in the milk! I had to add an extra egg white because the dough was too dry. I also rolled out all the dough onto parchment, transferred this to a sheet pan, then cut the dough into small pieces with a pizza cutter. I think mine were a bit thicker so i had to bake 11 min.Easy to break apart. Cool completely for the best crunch. Thanks!!

    The second dough is looking like it might make a great cheesecake crumb base.
    I think the reason the first did not stay together in milk was the psyllium....it is a major moisture absorber. I actually grimaced when I saw psyllium wondering how that will work.
    Egg whites I understand does make things crunchy.

    Another great battle.
    The only way I would take that much time to make keto cereal is if I was bored out of mind AND a doctor told me I would die the next day if I didn't.

    Pork rinds with sweetener & cinnamon is a great cereal replacement & cheap & easy to make 😃. Sounds weird but don’t knock it til you try it.

      Yes! Very good! I also put a few teaspoons of Golden Latte Powder (Turmeric, Cinnamon and Ginger all together) with powdered erythritol and shake over the Pork Rinds. Instant snack!!

    Oh, wow, Wes! Cereal didn't sound very interesting but it quickly became so! Thank you, so much! So often, the need for crunchy "wheaty" items is a longing unmet! With milk or dry, I think we have a winner! So glad you tried baking 'in the whole' for us! I think most of us would have said, "Pffffftttt!" and not tried it at all!

    My favorite breakfast cereal “cinnamon pork crunch”. Very easy to make. Break pork skins “chicharones“ into bite sized pieces. Mix together your favorite sweetener and cinnamon to your taste. Sprinkle it over the pork skins. Serve in a bowl with your favorite milk replacement (I use 1/2 cream1/2 water) it stays crispy for a while

      No way do you ever fall down on the job. You did a great job with a rather interesting instruction. And then that was the best of the 2 for cereal. I think as others have commented the 1st recipe would make a Graham cracker when adding a Graham extract, and maybe more cinnamon. What a treat that would be, as I miss them too.

    My go to lately has been cutting up a quest bar into tiny cubes and baking them in the oven for about 4 minutes each side. They puff up and have a great crunch.

      Except Quest Bars are NOT low carb -- I am a diabetic and they spiked my blood sugar so high for 5 hours!!! The purpose of low carb is to not spike insulin which is what stores fat. QUEST BARS are a total scam. There is a diabetic group that confronted them over their lies and blood sugars have been tested from about 50 diabetics with super high blood sugars. I could eat three KIT KAT bars to get blood sugar as high as a QUEST bar. WALK AWAY From those hooligan liars. You'd think they would TEST their bars before marketing them as low carb. If something spike blood sugar like eating an entire cake, it ain't low carb, no matter what their ingredient list says. If no diabetic can eat them, then it's a scam.

      @@pearlyq3560 was this very recent?? I know they have reformulated the bars and I've seen tests on UA-cam within the past 6 months and where they tested their blood sugar and ketones at 30 mins, 1 hour and 2 hours and showed no effect from the bar.

    I made a similar batch of cereal and when it cooled I didn't feel like they were hard enough for me. So I put them in the dehydrator for 30 min to 1 hour and it was fantastic!

    Oh my goodness! Just score the rolled out dough with a pizza cutter, bake on the parchment, and score again after
    they come out of the oven. Separate after they cool.

    I hate tedious recipes...call me lazy. Gnom-Gnom also has a similar recipe, but I have not even attempted it. FIVE servings! Like hell!

      But boy oh boy are they tasty! 😂 my daughter and I make the Cinnamon Toast Crunch 2.0 and the Cocoa Puffs. Sometimes we even shape them with our fondant tools. That cereal remains crunchy and the serving size is 40 grams-10 servings with an actual satiety. You could say 80 grams, which is what she jokes about on her website 👀 😝

    Thank you Highfalutin' Low Carb, made them both, so yummy. Just a suggestion, instead of parchment paper use two silicone mats to roll out your dough. It stays in place better, your rolling pin just glides over it and it's cheaper in the long run.

    Yay! I will definitely be making the 2nd one as soon as I order the rest of the ingredients! I'll be adding crushed pecans and maybe even cinnamon sweetener dusted pork rinds to make a heartier cereal. I'll eat mine with hwc though.
